Ginger Mustard Roasted Turnips

The turnips in my garden are doing me right and have gotten all nice and big and beautiful and just did a really good job growing this year. I (my stomach) am really appreciating it. So is the mr. He is a huge turnip fan too!

Now if you are not a turnip fan, well first off, why the heck not? But also have you even ever tried them? I have found that sometimes people say they don’t like something when in fact they have never tried it. Don’t be like that. Try the dang turnip. They are awesome. For those who don’t know, they taste basically like a big radish. Kind of spicy and crispy when raw, sweet and tender when roasted. These particular ones are roasted and tossed in a gingery mustard sauce and then roasted a little more so they are sweet and spicy and mustardy and just so good. I made a batch to share with the mr for dinner but I actually just ended up eating all of them to my face. Yup, and not shame there. I just cut up a couple of raw ones for the mr and threw them on his dinner plate. He did’t really notice. Ha!

Now to the turnips!

The stuff. Turnips, dijon mustard, ground ginger, balsamic vinegar, pepper. and a splash of water.

Dice up the turnips into small cubes. I never peel a turnip but if you get yours from a store and they cover it in wax, well you might want to.

Place cut up turnips on a baking sheet. You can also drizzle the turnips with a little oil here if you want. (I prefer to roast without oil and use a baking mat.)

And place them into a hot hot oven to roast.

While turnips are getting hot, mix up the ginger mustard sauce. Place mustard, ginger, balsamic vinegar and a splash of water into a bowl and mix it all together.

Once turnips are fork tender (about 1/2 hour) remove pan, gather all the turnips into a pile, and drizzle on most of the sauce. Toss around until evenly coated then re-spread them around and pop them back into oven for another 12- minutes or so or unit golden brown and nice and roasted.

Once they are roasted to your liking, remove from oven ,drizzle oin remaining sauce, add lots of cracked black pepper and some fresh parsley if you got it. And that is it.

Eat your turnips.

Ginger Mustard Roasted Turnips

seves 2-3 as a side

  • 4 medium sized turnips

  • 4 hefty tablespoons dijon mustard

  • 1 1/2 tablespoon balsamic vinegar

  • 1/2 teaspoon ground ginger

  • 2 teaspoon water

  • black pepper

  • oil (optional)

Preheat oven to 425

Prepare turnips. Wash them really well and then dice into small cubes and pace them on a baking sheet. You can toss them in a little oil if you want (I do not roast them in oil), then pop them into hot oven.

While turnips are roasting, grab a small bowl and mix up the ginger, mustard, and balsamic vinegar. Add about 2 teaspoons of water to thin it out a little bit.

After about 25-30 minutes the turnips should be fork tender and starting to brown a bit. Remove pan from oven and carefully gather the turnips into a pile on the baking sheet. Drizzle about 3/4 of the mustard sauce on turnips and toss around (carefully). Once all the turnips are coated, sprinkle with black pepper and re-spread them on the baking sheet and pop the back into the oven to bake for another 15ish minutes or until they are a nice golden brown.

Once roasted to your liking, remove from oven, drizzle on remaining sauce, and then eat.

Fudgesicles

If you haven’t started making your own frozen treats at home yet, what are you even doing?

Last week I shared a few of the favorites (and I fully expect you to have made at least one of them) but this one is for sure to make the favorite list. Fudgesicles. Creamy cold and chocolatety goodness. A perfect reprieve from all the stinkin hot ass f weather. It’s like chilled happiness on s stick.

So if you like cold chocolate treats, this one is for you.

To the fudgesicles!

The stuff. A can of full fat coconut milk, some cocoa powder, maple syrup, vanilla extract, flax seed, and a pinch of salt.

Dump it all into blender or jar (if using a hand blender) and blend until smooth.

Pour pinot molds and thats it, stick them into the freezer to freeze.

Don’t forget the sticks if using! (Pull the fudgsicles out after about an hour and they should hold a stick without it sinking).

Once completely frozen, well then they are completely ready to eat.

Stay cool. Eat Fudgesicles!

Fudgesicles

makes about 6

  • 1 can full fat coconut milk

  • 1/3 cup cocoa powder

  • 2-4 tablespoons maple syrup (greater amount for sweeter fudgsicle)

  • 1 teaspoon vanilla extract

  • pinch of salt

  • 1 tablespoon ground flax seed (optional)

Place all ingredients into a large jar or blender and blend until smooth. Pour mixture into popsicles molds and place in freezer util frozen. If using wooden sticks, pull the fudgsicles out after and hour or so and insert before they completely freeze.

Once froze, remove from mold and eat.

It is hot out Dumb hot. What do you do to stay cool? Me? Well besides spending my time splayed out on the kitchen floor (it’s the coolest spot in the house), I like to eat frozen food, sometimes in the form of popsicles. And it has been freaking stupid hot way too much already this year and I haven’t made nearly enough popsicles. That ends now. Dealing with the heat sucks and I deserve a freaking popsicles and so do you.

Here are a few of my favorites.

Peach Walnut Blondies

I have been on a peach kick for a couple weeks because they are just so good! Is it just me or are they better then they have ever been this year? I have eaten at least one a day (sometimes 2) for at least the past 2 weeks and not once have I gotten a grainy, mealy one. Just sweet ass juicy peachy goodness. Dang do I love a good peach!

Since the peaches are so good, it made sense to bake them into something and that something was blondies. A cakey cookie bar thing that is really easy to make, everyone loves, and highlights that goodness of the peaches. I tossed in some walnuts because why not, and as soon as the heat wave broke and I dared turn on the oven, I popped the batch in. Two days later and they are pretty much gone. And will I make them again, for sure yes, but only while the peaches are still good.

So you should probably make them while the peaches are good. Hurry up!

To the peach walnut blondie!

The stuff. A nice ripe peach and some walnuts. Flour, baking powder, and salt. Melted plant butter, brown sugar, vanilla extract, and some aquafaba.

Start with dicing up the peach and chopping up the walnuts into smaller pieces.

Next grab the aquafaba and dump into bowl with the brown sugar. Beat with an electric beater on high for about 2 minutes until mixture is a light brown and somewhat fluffy.

Add in all the dry and the melted butter and gently fold it in until completely incorporated.

Lastly fold in the diced up peach and walnuts.

Dump and smooth batter into a well greased and lined square baking pan and place into preheated oven to bake.

Once the blondies are golden brown and tester poked into the middle comes out clean, remove from oven and let cool.

Cut into pieces and then, you know, eat them.

Get at those peaches while you can!

Peach Walnut Blondies

makes a 8x8 (you can use a little larger square) pan

  • 1 3/4 cups all purpose flour

  • 3/4 cup packed light brown sugar

  • 1/3 cup aquafaba(liquid from a can of chickpeas)

  • 1/2 cup plant based butter melted

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1 medium peach (about 3/4 cup diced)

  • 1/2 cup chopped walnuts

Preheat oven to 350

Dice up the peach into small pieces and if the walnut pieces are whole or halved,, chop them into smaller pieces.

Dump the aquafaba and brown sugar into a large bowl and beat with an electric beater for around 2 minutes or until the mixture is a light brown and somewhat fluffy. Mix dry ingredients together in smaller bowl then gently fold the melted butter and dry mixture into the beaten sugar ans aqufaba. Once completely incorporated, fold in the diced peach and walnuts.

Grease and parchment line a 8x8 (or a little large) pan and dump blondie batter in and spread and level to the pan. Place into oven ad bake for about 30-33 minutes (if using a large sized pan, reduce cooking time by a few minutes) or until top is a nice golden brow and a tester poked into the middle comes out clean.

Remove from oven and let cool for a few minutes. Once cooled enough pop out of pan and coniunute to cool all the way.. Cut into pieces and eat.

Store uneaten blondies in a airtight container at room enrapture for 2-3 days but best stored in fridge or freezer when it is hot out. Plus they are amazing cold!

Strawberry Oat Milk

One of the most redeeming qualities of summer is the fresh, super sweet, strawberries that grow in the early part of the season. Bright red little gems that I go and hand pick from a strawberry field (early in the morning because who wants to be in a beating hot field in he middle or the day?), eating one berry for ever two I pick. Hands stained red. Belly full of berry happiness. It’s times like these that I am glad for summer.

And now that I have strawberries, I can make strawberry milk. Have you ever had it? This strawberry milk is nothing like the milk made from the nasty and crazy sweet fake pink syrup (strawberry syrup reminds me of my little brothers when they were little. They would drink cups and cup of the fake strawberry milk and I always thought that they were gross. But not just because of the milk…hehe). No this strawberry milk is oat milk with fresh strawberries and taste just like a berry explosion of goodness in your mouth. Its smooth and creamy and tastes like real strawberry, like it should.

A true summer treat. And it is so easy to make, almost as easy as squirting syrup into a cup.

Now to the strawberry oat milk!

The struff. Strawberries, oats, and water.

Only thing you really need to do is remove the greens from the berries.

Then pop them into a blender with water and oats and blend until smooth and creamy. That is it. Now you have strawberry oat milk.

Pour into glasses, garnish with a few berries (or a bowl to snack from) and that is that.

Summer milk.

Strawberry Oat Milk

  • 3/4 cup old fashion oats

  • 2 1/2 cups cold water

  • 1 cup fresh strawberries

  • 1 tablespoon sweetener or a couple dates (optional to add sweetness)

Note. For a thicker and creamer milk just add another 1/4 of oats.

Remove greens from strawberries and toss them into a blender with the oats and water and any sweetener (if using). Blend until smooth.

Optional. Pour through a strainer or nut milk bag to remove any grittiness. I do not do this.

Pour into glasses and enjoy.. I like to add an ice cube or a cut up frozen strawberry into the milk to make it really cold.

Milk can be stored in a jar in fridge for 2-3 days.
