Black Bean Soup with Cornbread Dumplings

Black beans soup is eaten on the regular around here. Not always the same way but pretty much. Why screw with a good thing you know?

Now soup with dumplings. This is not (yet) a regular thing but I was making the usual blacken soup and planing on making corn bread to go with (in a pan) , when I had a moment of clarity and realized that I should just make the corn bread into dumplings and not have to deal with baking and another pan to clean. Duh. Why don’t I do this more often?

And that is it. A black bean soup, nice and thick, with light fluffy cornbread dumplings cooked in one pot. Quick, easy and all sorts of delicious. Can’t complain about that.

Now let’s get to the soup and dumplings!

The stuff. For the soup there are bLackbeans, and onion, spices, a carrot, garlic, tomato paste, apple cider vinegar. For dumplings we have flour, baking powder, salt, oil, and plant milk. Salt and pepper too.

Start by dicing up the carrot and onion and mincing the garlic.

Dump all that you diced into a big pot, along with the spices, some salt and pepper, and about 1/2 cup of water. Place on stove and cook down on medium heat until the onion is becoming translucent and the whole pot is starting to smell fragrant.

Now add in beans and tomato paste and about 5 cups of water. Bring to a boil then turn down to medium an cook for about 20-30 minutes.

Soup. Cooked and all taste but one more little step.

Remove a third of the soup and blend until smooth and then add it back it.

Dumplings. Mix dry together then add in oil and milk. Mix together unit incorporated.

While soup is still on medium heat, scoop the dumping mixture right into the soup.

Place a loose side on top of pot ans let the dumplings cook util list and fluffy which will take about 15-20 minutes.

Then you eat it. Add some avocado on top of you want. Avocado is always a good idea.

Black Bean Soup with Cornbread Dumplings

feeds 3-4

  • 3 cups cooked black beans (or 2 16 oz cans)

  • 1 large onion

  • 1 good sized carrot

  • 3-4 cloves garlic

  • 1 teaspoon chill powder

  • 1 tablespoon cumin

  • 1/2 teaspoon red pepper flakes (or none if you don’t like the spice)

  • 1 tablespoon maple cider vineger

  • 1/3 cup tomato paste

  • 5 cups water

  • salt and pepper

    Dumplings

  • 3/4 cup all purpose flour

  • 1/4 cup corn meal

  • 3/4 cup plant milk

  • 2 tablespoon neutral oil

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

Start by dicing up the carrot and onion into small pieces. Mince the garlic and then place the garlic, onion, and carrot into a large pot with the cumin, chili powder, and red pepper flakes, a good pinch of salt and pepper, and about 1/2 a cup of water. Place pot on stove on a medium low heat and sweat the mixture for about 10-15 minutes or until fragrant and the onions are slightly translucent.

Add in the tomato paste, beans , and 5 cups water. Bring to a boil then reduce to medium heat and let cook for about1/2 hour. Once soup has cooked down a bit and tastes delicious, remove form heat and carefully transfer 1/3 of the soup to a blender or jar (if using a hand blander) and blend until smooth. Add the blend soup back to the pot and turn the heat back on to medium low. Taste and add more salt and pepper if needed.

Now make dumpling mixture. Mix the dry ingredients together in a bowl then add in the oil and milk and mix until incorporated. Scoops the dumping mixture into the soup while the soup then place a lid loosely on the pot. Cook for another 15-20 minutes or unit the dumplings are nice a n fluffy.

And when they are done, remove lid, tun the heat off, and paddle soup and dumplings into bowl. Eat. Add sliced avocado for a little more yum.

Almond Crusted Tofu

Are you a tofu person? I am very much a tofu person. I know that some people still think tofu is not so great or that it doesn’t taste like much or my favorite, that it doesn't taste like meat. And with that I say, well tofu isn’t meat so duh and yeah, it doesn't have a super powerful taste but it does taste good (especially really good fresh tofu) and tastes even better when you make it with tasty ingredients. But If you are a tofu person you already know that.

This tofu is good. I mean really really good. It is dredge and breaded in almonds and then baked until crispy., like a tofu nugget of sorts. I mixed mustard and vinegar into the dredge for some tang and added garlic and red pepper flakes to the almond coating to give it a bit more flavor but if you were feeling something different, say curry or Italian flavoring, well by all means, give it a go. I think the next time I make these (probably tonight) I am going to add a shit ton of cumin and chili powder and way more red pepper flakes. My stomach is rumbling already. And hopefully they will be to spicy for the mr so I don’t have to share. Its my craving. He can eat something else. Ha!

Now to the almond crusted tofu!

The stuff. A brick of firm tofu (which I have smooshed out a lot of liquid), whole almonds, and oats. Then there is flax meal, mustard, vinegar, almond milk, garlic powder, red pepper flakes, and salt and pepper.

Cutting up the tofu. Fist cut brick in half. Then turn each half on its side and cut into three equal pieces. flip back down each piece then can be cut into 4 triangles. And if you want to cut it up differently well then who am I to tell you otherwise.

Make the almond crust mixture. Almond and oats along with garlic powder, red pepper flakes, and sat and pepper go into the food processor and pulses utlil a crumbly. You don’t want it to fine but also not to chunky. Think bread crumb consistency.

Now make the dredge. Combine mustard, flax, vinegar, and plant milk in a wide shallow bowl until completely combined. Let it sit for a few minutes to really thicken.

Now you are all ready to go.

To coat the tofu just drag each piece through the wet mixture making sure it is evenly coated then drag with through the almond mixture.

Once all the pieces are crusted and on the baking sheet pop it into the hot oven and bake. 20ish minutes at first then flip eat piece and another 10ish minutes after that.

Baked and crispy.

Now you eat. Grab some dipping situations (I grabbed some guac and tomato sauce) and get at it.

So good.

Almond Crusted Tofu

makes 24 pieces

  • 1 brick firm or extra firm tofu

  • 1/2 cup almonds

  • 1/4 cup old fashion oats

  • 1/2 teaspoon red pepper flakes

  • 1 teaspoon garlic powder

  • 1/2 cup warm plant milk

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon mustard

  • 1 tasblepoon ground flaxseed

  • salt and pepper

Preheat oven to 450

Remove tofu from package and gently press out as much liquid as you can. Cut the tofu brick in half then flip each piece onto it’s side and cut each half into 3 equal pieces. Flip back down and then cut each third into 4 triangles. Or just cut the tofu into 24 each sizes pieces of your choice. Set aside on a dry towel.

Make the dredge. Combine flax seed, mustard, vinegar, warm plant milk and a inch of salt and pepper in a shallow bowl until completely combined.

To make the almond crust place the almonds, oats, garlic powder, red pepper flakes and a good pinch of salt and pepper into a food processor and pulse for about a minute or so until the texture is a small crumb the consistency of semi fine bread crumbs. Pour into a shallow bowl.

When all parts are ready to go, line up the dredge, the almond mixture, and get a baking sheet ready with either a baking mate or a little oil to keep the tofu from sticking. Take each piece of tofu and dip it though the dredge making sure to evenly coat it and then lift it out and let the excess drip off. The drop the tofu into the almond mixture and gently toss flip ti coat each side. Place coated onto baking sheet.

Once all the tofu is coated place it into the hot oven.Bake for 20 minutes then flip each piece and bake for another 8-12 minutes or unit crispy.

Once baked, remove from oven, place on a plate and eat. Want something to dip it in? I recommend guacamole. and or tomato sauce. Mustard and hummus are also fantastic!

Black eyed Pea-Sweet Potato and Tangerine Stew

I guess black eyed peas are good to eat on New Years because they bring you good luck or money or something. I have heard this and a lot of other food traditions but I don’t really do New Years so I have never really actively thought about what I consume on the day. But when I went to ponder my bean selection ( I have so many varieties) I figured what the hell, why not make the stew I was about to make into a good luck black eyed pea stew. I mean I was already making it (I was leaning towards black beans) but If there is a chance that eating these delicious beans will give me a little extra luck (and or money) this year, well by all means I’ll take it. And the stew because that is really what I was after.

This stew. It is thick and creamy from the sweet potato and beans, bright and light from the ginger and tangerines, and hearty because it is stew. It is a perfect stew situation to eat on any given day but especially nice on a cold winter evening. And I guess on New Years. Like today.

Now to the black eyed pea stew!

The stuff. Cooked black eyed peas. a sweet potato, some kale, a few tangerine, an onion, some garlic and ginger, tomato puree, and salt and pepper.

Start with chopping up the onion, mincing the garlic and ginger, and dicing up the sweet potato.

Toss the onion, garlic, and ginger into a big pot and add in a splash of water or oil and a pinch of salt. Place on medium heat ans cook until tranlucent and fragrant. Add in the sweet potatoes, tomato puree, and enough water to completely submerge it all. Keep on medium heat and cook until sweet potties are fork tender. Add more water if needed.

In he mean time chop up the kale.

And juice the tangerines.

Once potatoes are tender, add in the black eyed peas, the kale and the tangerine juice. Add more water to completely submerge again. And keep on medium high heat and cook for another 10-15 minutes or went everything is all melded and cooked together.

Like this. A pot of good goodness.

All that is left is to scoop the stew into blows and eat it. Squeeze more tangerine juice on top too, it makes it nice.

Black eyed Pea-Sweet Potato and Tangerine Stew

  • 2 cups cooked and drained black eyed peas

  • 1 medium sweet potato

  • 2-3 tangerines

  • 1/2 cup tomato puree

  • 1 small onion

  • 2 cloves garlic

  • 1/2 inch fresh ginger root

  • a few leaves of kale, chard, or collard greens

  • 4-6 cups water

Start by dicing up onion and peeling and mincing up the garlic and ginger. Place into a large pot with about 1/4 cup of water or a splash of oil and stick on stove on medium heat. Cook the mixture for 5-8 minutes or unit fragrant and translucent. While that is cooking dice up the sweet pot into small 1/2 inch cubes then add them into the pot once onion mixture has cooked, along with the tomato puree and enough water to completely submerge in all. Stir and and keep on medium heat and cook for another 20 or so minutes or until the sweet potatoes are fork tender.

Chop up kale and juice tangerines.

Once the sweet potato is tender add in the rinsed and drained black eyed peas, the chopped kale, and the tangerine juice. Add a sprinkle of salt and pepper and more water to submerge it all again and keep on medium heat. Cook for another 20 minutes so that all the flavors have time to meld and turn into a great pot of stew. Depending on your preference for thickness, cook down more for thicker stew, or add more water to keep it brothy.

Once cooked, scoop into bowls, season with more salt and pepper, and if you have an extra tangerine, squeeze a little more fresh juice on top.

Sweet Potato Steaks on Arugula and Kale with Pea Avocado Cream

All I want to do is eat fists fulls of arugula. Ok, maybe that is not all I want to do, but it is something that I have been doing a lot. I have always really like arugula but as of right now, it is my top choice green!

Anyway, big green salads are all I want to eat because it is spring and all and greens are the best in the spring. But I still am eating a lot of roots and will be eating them for a few more weeks unit winter farm share dies down. And because it is the end of the season, the choice of roots is dwindling and we basically get a bucket of carrots, beets, and sweet potatoes. Lots of sweet potatoes, which by the way, I am not made about. And greens, We get lots of greens!

So my new favorite salad comes to fruition. Thick cut sweet potato steaks on a bed of fresh spring arugula and kale toped with a thick creamy avocado pea situation and some toasted walnuts for flair and crunch. I mean, is your mouth watering and your tummy grumbling yet?

Mine is but that is just how it always is.

Now to the steaks and salad!

The stuff. A sweet potato, some arugula and tender kale, peas (frozen and thawed) half an avocado, some toasted walnuts, a lemon, and salt and pepper.

Start by cutting the sweet potato into thick steaks. 4-5 same thickness slices if you may.

And no roast up the sweet potato steaks. Just place hem onto a baking sheet and pop them into a hot oven. Bake for 2-30 minutes, flipping over after 15-20 minutes. Once tender, remove from oven and set aside.

While sweet potatoes are baking, make pea avocado cream. Place peas and avocado into a blender or cup if using a hand blender along with the juice of the lemon and about a tablespoon of water. And a small pinch of salt. Blend until smooth. Add more water a tablespoon at a time until you get a thick but pourable constancy.

Now rough chop the kale and toss together with the arugula and place in a large salad bowl

Place the sweet potato steaks on top of the greens. Note here that the sweet potato steaks can be hot, warm, or cold. The are good all the ways.

Then top it all with the pea avocado cream. Toss on the toasted walnuts and add some more black pepper and that be that. Grab a fork and a knife if you wish and get to it.

So much goodness in the mouth!

Sweet Potato Steaks on Arugula and Kale with Pea Avocado Cream

serves 1-2

  • 1 medium sweet potato

  • 1/2 cup frozen (and thawed) green peas

  • 1/2 of an avocado

  • a small lemon

  • 2 large handfuls of fresh arugula

  • 4-5 leaves of tender kale

  • 1/4 cup toasted walnuts

  • around 1/4 cup cold water

  • salt and pepper

Preheat oven to 450. Wash sweet potato and cut into 4-5 equal thickness slices. Place cut pieces on a baking sheet and sprinkle with salt and pepper and pop into oven. Bake for 25-30 minutes, flipping after 15 or until the sweet potato is tender. Remove from oven and let cool a bit.

While sweet potato is baking off, make pea avocado cream. Place the peas and avocado into a blender or cup if using a hand blender, add in the juice of the lemon and a pinch of salt. Blend until smooth. Add in a tablespoon or two (or more) to thin out until it is still thick but pourable. Also rough chop the kale and mix together with the arugula in a big salad bowl.

Once sweet potato steaks have baked and cooled off a little bit (you can eat them hot or cold so whatever temperature you want), place them on top of the greens then top with the pea avocado cream, sprinkle on toasted walnuts, more black pepper, and maybe a squeeze of more lemon if you have it.

Then grab a fork and knife and start eating.

Crispy Green Beans

I rely pretty heavily on frozen produce in the mid to late parts of winter. I do have my winter farm share but that is never enough so I pack my freezer as full as I can with stuff in the fall (mostly shredded zucchini and lots of tomatoes and eggplant). And then sometime between Christmas and New Years its pretty much gone. Once that happens I start in with store bought frozen veggies. I usually by frozen broccoli, peas, and green beans and right now me and the frozen green beans are having a moment.

I don’t know how it started but almost everyday I dump like half a bag of frozen green beans (sometimes a whole bag) onto a baking sheet without any oil or seasoning, and pop it into a hot oven for like 15 minutes. And that is it. I pull them put and they are crispy, crunchy, and probably one of the tastily way a green bean can be eaten (besides fresh). And the weird thing is, I have tried to mimic the crispness and crunchiness with fresh green beans but it never works out. There is something about roasting them frozen that gives them the perfect crispy texture. And no no to oil. They don’t need it, it only makes the beans soggy.

So it might seem kind of weird and it’s not a recipe, but I highly, HIGHLY, suggest that next time have a hankering for a tastely crunchy treat, try roasting some frozen green beans. And then let me know if you become addicted too.

Sometimes it’s the simplest things, you know?

And yes, I usually just eat them off the baking sheet with my fingers because why bother dirtying a dish?

Crispy Green Beans

  • Frozen green beans

Preheat oven to 400

Dump frozen green beans onto a non oiled baking sheet single layered and place into hot oven. Bake for 15-20 minutes or until crispy. Remove and eat.
