Socca Beet and Onion Casserole

Whoa has It been a while since I have posted a recipe. Not that I haven’t wanted to or that I haven’t been making food, I just have been busy A.F. And truthfully I am as busy as ever but I happen to have my phone next to me when I was making this little casserole dish thing that I have made a few times now and I think it well worth a share.

What is it you ask? It is a creamy but dense chickpea base covered in tender roasted beets and onions with a lemon tahini drizzle. It is simple to make, super delicious, and can be tweaked in a million different ways to your liking.

Is it a fantastic dish to serve at say a Thanksgiving? Well yes, yes it is. You can serve it as a side or even make it bigger and have it as a sort of main dish. It’s a good protein that is naturally gluten and grain free, vegan, and blah blah blah. What really matters here though is that it is damn tasty and also bonus, it is so siimple to make and can even be prepared a day in advance so no stress. We will take all the wins here.

Socca Beet and Onion Casserole

makes a 8x8 casserole

  • 1 cup chickpea flour

  • 2 cups boiling water

  • 1 teaspoon salt plus more to taste

  • ground black pepper

  • 2 teaspoons cumin (feel free to omit or use a different spice.Thyme or rosemary are equally delicious )

  • 2 medium beets

  • 1 large onion

  • a lemon

  • 1-2 tablespoons tahini

  • teaspoon or so olive oil.

Note. This dish is excellent made and eaten right away but also gets even better (in my opinion) cooled and reheated. Also you can change up the veggie situation and use whatever ones you like.

Place chickpea flour in a bowl and slowly whisk in boil water with a fork so that there are no lumps. Mix in cumin and a teaspoon of salt and a pepper. Scoop batter into a lightly oiled 8X8 casserole dish (you can use a round cake tin or a cast iron skillet as well) and set aside to rest for a few.

Preheat oven to 400.

Grab beets and onion and slice in about 1/8 thick slices. Layer slices on top of chickpea mixture, making it look pretty if you feel like it. Once the veggies are layered, lightly drizzle the top with a teaspoon olive oil and sprinkle with a good pinch of salt and pepper.

When the oven is preheated, covered the baking dish and place in oven,. Bake covered for 1/2 hour then remove covering and bake for another 20-30 minutes or until the beets are nice and tender and a tester poked into the center of the dish comes out clean. Remove from oven,

Once it’s out of the oven grab a little bowl and add the juice of the lemon to the tahini and mix. Season with salt to you liking.

Now serve. Drizzle the top with the tahini mixture and cut yourself a big old piece. Yes drizzle extra tahini on top. Sure squeeze on more lemon. You do you.

Store leftovers in fridge. Reheat in hot oven for 10 minutes..It gets crispy!

Spinach and Mushroom Lentil Bake

A week out to the big holiday!

How are you doing? Are you making all the cookies and cakes and all the things? Are you getting all the cookies and cakes and things given to you? And are you eating all the cookies and cakes and things?

That is cool because that is what is suppose to go down right now. But one thing we all need to do is make sure we are eating some decent food (not cookies and cakes and things) as well.

Like lentils with some veggies. You really can’t go wrong with lentils because they are the best and don’t you dare say otherwise. This bake here is packed with lentils, mushrooms and spinach, is creamy and crispy, hearty and warming, and tastes so freaking good. A no fuss, easy peasy meal that can be thrown together fast and when you are eating it, you are feeling good. And once you start eating it, you probably won’t be able to stop (that was me anyway…)

So make yourself something nice to go along with all the cookies, cakes, and things. You need it.

To the lentils!

The stuff. Red and green lentils, a few big mushrooms, a couple handfuls of spinach, an onion, crushed tomatoes. dill, thyme, sage, and red pepper flakes, chick pea flour, a couple cloves or garlic, water, oil, and and pepper.

Start with the lentils. Just dump them all into a pot with the water. Place on stove and bring a boil.

Now chop up onion into small bits, mince garlic, and slice the mushrooms thinly and in half.

Add a splash of oil to a large oven safe skillet and place on stove on medium heat. Once skillet is hot, add in the garlic, onions, and mushroom. Start to cook, adding in all the spices once they start to sizzle. Cook until the onion starts to become fragrant and translucent and fragrant and the mushrooms are slightly browned.

Once the lentils come to a boil, let cook for another minute or two then remove from heat. (If there is a bunch of foam on top of pot, just scape it off.) Add in the chickpea flour, the tomatoes, and all the spinach. Season with sat and pepper too.

Dump the lentil mixture into the skillet with the mushrooms and onion and mix everything all around until its all incorporated. Level off top and then stick the whole thing into the oven. Bake covered for 30 minutes then remove cover, give the whole thing a (careful, it is hot) good stir, re-level off the tope, and keep baking for another 30-35 minutes or until the top of the lentils are nice and crispy ans the inside is nice an creamy.

The crispy top lentils are everything.

Scoop into bowls, add some fresh chopped something of another if you want ( I had fresh dill and parsley) and eat away.

What is not pictured here is the yellow mustard I had in waiting. Mustard on this… AMAZING!

Spinach and Mushroom Lentil Bake

feed 3-5 people

  • 3/4 cup each red and green lentils (or 1 1/2 cups of either)

  • 1 cup crushed or diced tomatoes

  • 1 small onion

  • 2 cloves garlic

  • 2 tablespoons chickpea flour (can sub with cornmeal or oat flour)

  • 1 teaspoon each dried sage, thyme, and dill

  • 2 large handfuls spinach (about 3 cups)

  • 2-3 large white or cramini mushrooms (about 1 1/2 chopped)

  • 2 1/2 cups water

  • splash of olive oil

  • salt and pepper to taste

Preheat oven to 400

Dump lentils into a pot with the water and bring to a boil. Once boiling, let cook for a minutes or two then remove from heat. If there is a bunch of foam on top, just scrap it off. Mix in the chickpea flour, tomatoes, and spinach. Season with salt and pepper

While lentils are cooking, chop onion into small pieces, slice mushrooms in half, then the halves into thin pieces and mince garlic. Place a large oven safe skillet on stove on medium heat. Add a small splash or oil and once heated, dump the onion, garlic, and mushrooms to the hot skillet. Cook for 5-7 minutes or until the mushrooms start to brown and the onions and garlic are fragrant. Add in the spiced and stir around.

Take skillet off heat and carefully dump in the lentils mixture and mix around with the mushroom and onions. (if you don’t have a large enough oven safe skillet just dump it all into a casserole dish) Level off mixture and place in the oven, covered for 1 hour, removing cover 1/2 way through and giving he whole mixture a mix ad re- leveling it off.

Once baked and nice and crispy (the longer you bake it, the crispier it gets) remove from oven and serve immediately. Toss some fresh dil and parsley on top if you have it. Also mustard as a condiment goes amazingly with this!

Cajun Lentil and Rice Bake

It is spring yes? I know it is officially spring but around here it has been more or less still winter which is to be expected but is, at this point, no longer welcomed. I, as well as everyone else I talk to, are over it. Enough snow. enough of the hats and jackets. Just enough.

But the bright side of the chilly, cold weather is that we can and still want to turn the oven on and cook things. And because I turned the heat off a little prematurely, I am cold so I really want the oven on.

One skillet, a little chop action, a stir, some good time in the oven and there you go, food for your belly. Not a ton of dishes to do, steps to fallow, thoughts to think (other then eating thoughts). A good old, hearty, simple to toss together, spicy, delicious skillet of goodness. Prepare it fast, pop into warm oven, sit in kitchen drawing up plans for the spring veggie garden, and then eat yourself warm. What more can we ask for?

We can ask for spring weather because seriously. But other then that.

To the goodness of cajun lentils and rice!

The stuff. Lentils, brown rice, cajun seasoning, some crushed tomatoes, an onion, a carrot, a few cloves garlic, some cauliflower, water, oil, and salt and pepper.

First off, mince garlic and chop up the cauliflower, carrot, and onion into small pieces.

Toss it all into a good sized oven safe skillet with a splash of oil. Mix in the cajun seasoning too and stick o nth stove on medium heat for a few minutes.

Cook until fragrant and slightly tender. Taste it, it is good.

Dump in the lentils and rice. Then dump I the tomatoes and the water. Give it all a mix.

Grab some green thing to chop and toss on for some color.

Now grab some bowls, a few forks, and get to eating.

Cajun Lentil and Rice Bake

Serves 4-6

  • 3/4 cup uncooked brown or white rice

  • 3/4 cup dried green lentils

  • 2 cups crushed tomatoes (preferably not salted)

  • 2 1/4 cups water

  • 3 tablespoons cajun seasoning (see note)

  • 1 large carrot

  • 1/4 head of cauliflower (about 2 cups chopped)

  • 1 large yellow onion

  • 2-3 cloves garlic

  • 1 tablespoon olive oil

  • salt and pepper

Note. Store bought cajun seasoning usually contains salt and pepper so when seasoning, be aware of the amount of salt (if any) you choose to use.

Preheat oven to 350

Start by chopping the carrot, onion, and cauliflower into small pieces. Mince the garlic and toss it all into the skillet with the olive oil. Stir in the cajun seasoning and sprinkle in salt and pepper if it needs it. Place skillet on medium high heat and cook veggies until fragrant and slightly tender which should take about 5 minutes then remove from heat. Dump in the lentils, rice, water and tomatoes. Stir until mixed then either place a lid or foil over the top. Place into preheated oven for about an hour, removing the lid or foil after 40ish minutes and giving it a stir when you do. The bake is done when the rice and lentils are fully cooked, but if you are into a crispy top and crunchy sides, by all means, cook a little longer.

Remove from oven when fully cooked and you are happy with crispness. Let cool for a few minutes, toss on some chopped green something or another if you want, and serve it up.

Left overs store great in the fridge for a few day and freeze well too.

Potatoes in Tomatoes with Chick Peas and Onions

Potatoes in tomatoes. It just has a nice ring to it. And to tell the truth, that is the only reason I made this dish, because it sounds good.

Ok, not really the only reason, but it was the start, that and I have been sitting on some potatoes for a little while and it was time for them to be eaten. Enter in the tomatoes. I figures cooking the potatoes in tomatoes is alike to a ketchup and french fry situation. Not completely the same, but you get the idea. Add in chickpeas for good measure and onion because I wanted to and that is that. Nothing fussy, one pot, easy, hearty, and good.

Also not hurting anyone that these potatoes take a little while to bake. I could have made this dish in a way that made them cook faster (like parboil the potatoes) but I wanted the heat from the oven. It has been pretty freaking dang cold out so I liked having the heat, it adds another dimension to the term comfort food (as in me being comfortable hanging out next a hot oven).

Anyway, nothing too fancy, just all around tasty dish. It is just what you need to bake and eat on any given cold winter day. And it sounds nice too. Just say it aloud. Potatoes in Tomatoes. Right? Now you see, it had to be done.

To the potatoes in tomatoes!

The stuff. Potatoes, crushed tomatoes, cooked chick peas, an onion, a few cloves garlic, Italian seasoning, salt and pepper and a bit of olive oil.

Start by chopping the onion and mincing the garlic.

Get it all into a cast iron pan or oven safe skillet with a little olive oil. Add the spices and give it some heat on the stove top while you cut potatoes.

Now cut those potatoes nice and thin. A mandolin works wonders but a knife will do just as well, just try to keep the thickness all the same.

Potatoes are cut and onion mixture has sweated a bit so now you add in the chick peas (with liquid) and half the crushed tomatoes. Stir it all up.

Layer on potatoes, drizzle with a tiny bit of olive oil and give them some salt and pepper love.

Dump the rest of the tomatoes on top then add in water, enough that all the potatoes are completely submerged.

Now into the oven they go.

Doesn’t that just look all fantastic? I mean really really , A+ good, no? If you are feeling extra crispy, you could even stick the skillet under the broiler for a few minutes right before you pull it out.

And that is that. Potatoes in tomatoes with chick peas and onions. A simple but very satisfying dish to keep your cold belly full of warm goodness.

potatoes in tomatoes with chick peas and onions

  • About a pound or so of white or red potatoes

  • 3 cups (or a 28oz can) crushed tomatoes

  • 2 cups (or a 16 oz can) cooked chickpeas in liquid

  • 1 large onion

  • 2-3 close garlic

  • 2 tablespoons Italian seasoning

  • 2-3 cups water

  • olive oil

  • salt and pepper

Preheat oven to 400

Grab onion and dice into small pieces. Mince the garlic. Grab a medium sized oven safe skillet and toss the onion and garlic in with a tablespoon or so of olive oil and the seasoning. Place on medium heat and cook for a few minutes until the the onion is slightly cooked and fragrant. Remove from heat. Mix in the chick peas with liquid and half of the crushed tomatoes.

Rinse potatoes and slice into 1/4 inch thick rounds. Place tomatoes into the skillet, layering any way you want. Drizzle the top with like a teaspoon olive oil then sprinkle the tomatoes with salt and pepper. Spread the rest of the crushed tomatoes over the potatoes then pour the water in. If the potatoes are not completely submerged in water, add more until they are. Cover the skillet with a lid or tin foil.

Place skillet in oven and bake 40ish minutes then remove lid or foil and bake for another 25-30 minutes or until potatoes are fork tender and slightly crispy on the edges. Depending on the type of patotoes you use,(like a really firm and waxy yellow potato) you might need to add more water to the skillet and cook for longer. If that is the case, just pour more water over until the potatoes are submerged again and keep baking until cooked.

For extra crispy, when potatoes are done, place skillet under broiler for a few minutes until crisp to your liking.

Pull from oven, let cool a minutes or two then dig in.

Butter Bean Cabbage Rolls

A lot of times I make food that I don’t nessasrily care to eat because well, I love to make for other people. Take all the cakes, I love to make cake, it makes me so happy to make a cake, but I don’t eat cake. I never eat cake.

This is not one of those times. I basically made these cabbage rolls all for me. Sure I shared them with the mr because it was dinner but honestly, he was’t the biggest fan (he hate celery). And to be honest, I was glad he didn’t really like them because these things were bonkers amazing to me whichh means I got to eat them all myself. In fact I thought they were so good that I made them twice this week. And not just because I have a shit load of cabbage right now, (I stocked up on cabbage and have like 15 heads in the pantry and stuffed in the fridge), although it helped that I do.

I ♥️ cabbage.

And now I ♥️ these cabbage rolls.

To the rolls!

The stuff. A head of cabbage, a can of butter beans (cooked from dried beans or canned), crushed tomato (also home made or canned), a couple stocks of celery, a carrot, an onion, some garlic, Italian seasoning, salt and pepper, and a little olive oil.

Start by getting the cabbage leaves to roll the filling in. You are basically just going to dunk the whole head of cabbage, with the core removed, into a big pot of boiling water until the outer leaves are tender enough to peel away. You are going to want to 12-14 nice leaves so peel away using tongs. Once you have all the leaves, remove the rest of the cabbage ans place the leaves back into the pot to cook until completely tender and soft. Remove then from the water and place them into a bowl and let them cool.

Meanwhile the filling. Take roughly half of the remaining cabbage and rough chop it up along with the celery, carrot, onion and garlic.

Place it all into food processor and pulse until its a small chunky chunk consistancy.

Add a splash of olive oil to a pan then dump the veggies on in. Sprinkle with salt and pepper and the Italian seasoning then set on a medium heat on the stove to start to cook the veggies a bit.

One the veggies are out and cooking, pulse up the butter beans in the food processor until not quite smooth. Some chunk is good.

Dump the veggies back into the food processor with the beans, along with a little of the crushed tomato. Pulse a few times.

That is the filling. Time to roll.

Pat each leave dry and lay flat on counter. If your cabbage leaves have thick ribs you can slice them down the middle, just not to far up into the leaf. Add about 1/3 of a cup of the filling (add less for smaller leaves) and then roll as tightly as you can like a burrito without the filling coming out. Repeat until all the filling is gone.

Place all of the rolls nice and cozy into a oven safe pan, preferably the pan you have been using to cook the veggies in (you want them to fit close together, it helps then from opening up during cooking ) and cover then all up with crushed tomato.

Now all you need to do is stick the whole thing in the oven.

If you got it, spinkled with some green scallions and parsley for color and flavor and the all you need to do it eat. Eat one or eat them all because they are freaking fantastic!

P.S. Left overs are just as good, if not better cold.

Butter Bean Cabbage Rolls

  • A medium sized head of cabbage

  • 2 cups (or 1 can) cooked butter beans

  • an onion

  • 1 large carrots

  • 2 stalks of celery

  • 3 cloves garlic

  • 3 1/2 cups crushed tomatoes (or a 28 oz can)

  • 1 tablespoon Italian seasoning

  • olive oil

  • salt and pepper

First thing, bring a large pot of water to a boil. Remove the core from the head of cabbage and place the cabbage head into the boiling water. Gently peal away 12-14 of the outer leaves from the head then remove the head. Place the leaves back into the boiling water until they are soft and plyable. Remove from water and place in a large bowl.

Preheat oven to 400

Rough chop about half of the remaining cabbage head (like a little more then a cup) the carrot, celery, onion, and the garlic and place into a food processor. Pulse until its a small chunk consistency. Add a drizzle of olive oil to a skillet (if you can, use a oven safe skillet the can also be used to bake the rolls in) and dump the veggies in. Sprinkle with the Italian seasoning, salt and pepper, and place on a medium heat to cook for a few minutes. While the veggies are cooking, drain the beans and dump them into the food processsor. Pulse until not quite smooth. After the veggies have started to become fragrant and are not completely raw, dump those veggies back into the food processor with the beans. Add about 1/3 cup of the crushed tomato and pulse until combined.

To assemble the rolls. Pat the leaves dry and lay flat. If a leaf has a really thick rib, cut it down the middle, but not to far up the leaf.. Place about 1/3 cup of filling into each leaf (less if the leaves are small) and roll each one up like a burrito, as tight as you can without ripping the cabbage. Place rolls into oven safe skillet, bumped up against each other if they can. Once all the rolls are assembled and in skillet, pour the crushed tomatoes all over, getting the sauce in between each of the rolls.

And then place the rolls into oven to bake for an hour.

Once the rolls looked cooked and maybe a little crisp on an edge or two, remove and let cool a few minutes before serving.

Chopped parsley and scallions are nice to sprinkle on top if you got it.

Eat, and eat some more. Any left over should be placed into the fridge and eaten just a short few hours later cold, while standing in from of the fridge because these cold are almost better then hot. So good!
