Socca Beet and Onion Casserole

Whoa has It been a while since I have posted a recipe. Not that I haven’t wanted to or that I haven’t been making food, I just have been busy A.F. And truthfully I am as busy as ever but I happen to have my phone next to me when I was making this little casserole dish thing that I have made a few times now and I think it well worth a share.

What is it you ask? It is a creamy but dense chickpea base covered in tender roasted beets and onions with a lemon tahini drizzle. It is simple to make, super delicious, and can be tweaked in a million different ways to your liking.

Is it a fantastic dish to serve at say a Thanksgiving? Well yes, yes it is. You can serve it as a side or even make it bigger and have it as a sort of main dish. It’s a good protein that is naturally gluten and grain free, vegan, and blah blah blah. What really matters here though is that it is damn tasty and also bonus, it is so siimple to make and can even be prepared a day in advance so no stress. We will take all the wins here.

Socca Beet and Onion Casserole

makes a 8x8 casserole

  • 1 cup chickpea flour

  • 2 cups boiling water

  • 1 teaspoon salt plus more to taste

  • ground black pepper

  • 2 teaspoons cumin (feel free to omit or use a different spice.Thyme or rosemary are equally delicious )

  • 2 medium beets

  • 1 large onion

  • a lemon

  • 1-2 tablespoons tahini

  • teaspoon or so olive oil.

Note. This dish is excellent made and eaten right away but also gets even better (in my opinion) cooled and reheated. Also you can change up the veggie situation and use whatever ones you like.

Place chickpea flour in a bowl and slowly whisk in boil water with a fork so that there are no lumps. Mix in cumin and a teaspoon of salt and a pepper. Scoop batter into a lightly oiled 8X8 casserole dish (you can use a round cake tin or a cast iron skillet as well) and set aside to rest for a few.

Preheat oven to 400.

Grab beets and onion and slice in about 1/8 thick slices. Layer slices on top of chickpea mixture, making it look pretty if you feel like it. Once the veggies are layered, lightly drizzle the top with a teaspoon olive oil and sprinkle with a good pinch of salt and pepper.

When the oven is preheated, covered the baking dish and place in oven,. Bake covered for 1/2 hour then remove covering and bake for another 20-30 minutes or until the beets are nice and tender and a tester poked into the center of the dish comes out clean. Remove from oven,

Once it’s out of the oven grab a little bowl and add the juice of the lemon to the tahini and mix. Season with salt to you liking.

Now serve. Drizzle the top with the tahini mixture and cut yourself a big old piece. Yes drizzle extra tahini on top. Sure squeeze on more lemon. You do you.

Store leftovers in fridge. Reheat in hot oven for 10 minutes..It gets crispy!

Spinach and Mushroom Lentil Bake

A week out to the big holiday!

How are you doing? Are you making all the cookies and cakes and all the things? Are you getting all the cookies and cakes and things given to you? And are you eating all the cookies and cakes and things?

That is cool because that is what is suppose to go down right now. But one thing we all need to do is make sure we are eating some decent food (not cookies and cakes and things) as well.

Like lentils with some veggies. You really can’t go wrong with lentils because they are the best and don’t you dare say otherwise. This bake here is packed with lentils, mushrooms and spinach, is creamy and crispy, hearty and warming, and tastes so freaking good. A no fuss, easy peasy meal that can be thrown together fast and when you are eating it, you are feeling good. And once you start eating it, you probably won’t be able to stop (that was me anyway…)

So make yourself something nice to go along with all the cookies, cakes, and things. You need it.

To the lentils!

The stuff. Red and green lentils, a few big mushrooms, a couple handfuls of spinach, an onion, crushed tomatoes. dill, thyme, sage, and red pepper flakes, chick pea flour, a couple cloves or garlic, water, oil, and and pepper.

Start with the lentils. Just dump them all into a pot with the water. Place on stove and bring a boil.

Now chop up onion into small bits, mince garlic, and slice the mushrooms thinly and in half.

Add a splash of oil to a large oven safe skillet and place on stove on medium heat. Once skillet is hot, add in the garlic, onions, and mushroom. Start to cook, adding in all the spices once they start to sizzle. Cook until the onion starts to become fragrant and translucent and fragrant and the mushrooms are slightly browned.

Once the lentils come to a boil, let cook for another minute or two then remove from heat. (If there is a bunch of foam on top of pot, just scape it off.) Add in the chickpea flour, the tomatoes, and all the spinach. Season with sat and pepper too.

Dump the lentil mixture into the skillet with the mushrooms and onion and mix everything all around until its all incorporated. Level off top and then stick the whole thing into the oven. Bake covered for 30 minutes then remove cover, give the whole thing a (careful, it is hot) good stir, re-level off the tope, and keep baking for another 30-35 minutes or until the top of the lentils are nice and crispy ans the inside is nice an creamy.

The crispy top lentils are everything.

Scoop into bowls, add some fresh chopped something of another if you want ( I had fresh dill and parsley) and eat away.

What is not pictured here is the yellow mustard I had in waiting. Mustard on this… AMAZING!

Spinach and Mushroom Lentil Bake

feed 3-5 people

  • 3/4 cup each red and green lentils (or 1 1/2 cups of either)

  • 1 cup crushed or diced tomatoes

  • 1 small onion

  • 2 cloves garlic

  • 2 tablespoons chickpea flour (can sub with cornmeal or oat flour)

  • 1 teaspoon each dried sage, thyme, and dill

  • 2 large handfuls spinach (about 3 cups)

  • 2-3 large white or cramini mushrooms (about 1 1/2 chopped)

  • 2 1/2 cups water

  • splash of olive oil

  • salt and pepper to taste

Preheat oven to 400

Dump lentils into a pot with the water and bring to a boil. Once boiling, let cook for a minutes or two then remove from heat. If there is a bunch of foam on top, just scrap it off. Mix in the chickpea flour, tomatoes, and spinach. Season with salt and pepper

While lentils are cooking, chop onion into small pieces, slice mushrooms in half, then the halves into thin pieces and mince garlic. Place a large oven safe skillet on stove on medium heat. Add a small splash or oil and once heated, dump the onion, garlic, and mushrooms to the hot skillet. Cook for 5-7 minutes or until the mushrooms start to brown and the onions and garlic are fragrant. Add in the spiced and stir around.

Take skillet off heat and carefully dump in the lentils mixture and mix around with the mushroom and onions. (if you don’t have a large enough oven safe skillet just dump it all into a casserole dish) Level off mixture and place in the oven, covered for 1 hour, removing cover 1/2 way through and giving he whole mixture a mix ad re- leveling it off.

Once baked and nice and crispy (the longer you bake it, the crispier it gets) remove from oven and serve immediately. Toss some fresh dil and parsley on top if you have it. Also mustard as a condiment goes amazingly with this!

Cajun Lentil and Rice Bake

It is spring yes? I know it is officially spring but around here it has been more or less still winter which is to be expected but is, at this point, no longer welcomed. I, as well as everyone else I talk to, are over it. Enough snow. enough of the hats and jackets. Just enough.

But the bright side of the chilly, cold weather is that we can and still want to turn the oven on and cook things. And because I turned the heat off a little prematurely, I am cold so I really want the oven on.

One skillet, a little chop action, a stir, some good time in the oven and there you go, food for your belly. Not a ton of dishes to do, steps to fallow, thoughts to think (other then eating thoughts). A good old, hearty, simple to toss together, spicy, delicious skillet of goodness. Prepare it fast, pop into warm oven, sit in kitchen drawing up plans for the spring veggie garden, and then eat yourself warm. What more can we ask for?

We can ask for spring weather because seriously. But other then that.

To the goodness of cajun lentils and rice!

The stuff. Lentils, brown rice, cajun seasoning, some crushed tomatoes, an onion, a carrot, a few cloves garlic, some cauliflower, water, oil, and salt and pepper.

First off, mince garlic and chop up the cauliflower, carrot, and onion into small pieces.

Toss it all into a good sized oven safe skillet with a splash of oil. Mix in the cajun seasoning too and stick o nth stove on medium heat for a few minutes.

Cook until fragrant and slightly tender. Taste it, it is good.

Dump in the lentils and rice. Then dump I the tomatoes and the water. Give it all a mix.

And after. All done. Now dinner.

Grab some green thing to chop and toss on for some color.

Now grab some bowls, a few forks, and get to eating.

Cajun Lentil and Rice Bake

Serves 4-6

  • 3/4 cup uncooked brown or white rice

  • 3/4 cup dried green lentils

  • 2 cups crushed tomatoes (preferably not salted)

  • 2 1/4 cups water

  • 3 tablespoons cajun seasoning (see note)

  • 1 large carrot

  • 1/4 head of cauliflower (about 2 cups chopped)

  • 1 large yellow onion

  • 2-3 cloves garlic

  • 1 tablespoon olive oil

  • salt and pepper

Note. Store bought cajun seasoning usually contains salt and pepper so when seasoning, be aware of the amount of salt (if any) you choose to use.

Preheat oven to 350

Start by chopping the carrot, onion, and cauliflower into small pieces. Mince the garlic and toss it all into the skillet with the olive oil. Stir in the cajun seasoning and sprinkle in salt and pepper if it needs it. Place skillet on medium high heat and cook veggies until fragrant and slightly tender which should take about 5 minutes then remove from heat. Dump in the lentils, rice, water and tomatoes. Stir until mixed then either place a lid or foil over the top. Place into preheated oven for about an hour, removing the lid or foil after 40ish minutes and giving it a stir when you do. The bake is done when the rice and lentils are fully cooked, but if you are into a crispy top and crunchy sides, by all means, cook a little longer.

Remove from oven when fully cooked and you are happy with crispness. Let cool for a few minutes, toss on some chopped green something or another if you want, and serve it up.

Left overs store great in the fridge for a few day and freeze well too.

Butternut Chickpea kale coconut casserole topped with hazelnuts

Casseroles are a winter staple. So versatile, easy to make, can feed a few or feed a crowd, and best part is you can stick one into the oven and and kind of forget about it for a while. On a cold day having the oven on is always welcome, and timing with these things, well you can keep it in the oven for a little while longer then it needs because the worst thing that will happen is that it will get a little more crispy, and that is only an added bonus because the crispy bits are the best.  And what I really love about casseroles is left overs. If you are smart you make it bigger then needed so you have some left over to either eat the next day or freeze for a meal later. Leftover casseroles are the best. 

This casserole is a nice, hearty, stick toy your bone with our feeling heavy and gross casserole. Coconut milk and butternut squash give a creaminess, chickpeas for protein and goodness, kale because, and hazelnuts for a nice yummy crunch. All the flavors pair well together and also pair well with many different types of seasonings. I was going to go curry, then I was thinking rosemary, but ended up keeping it simple without any spices which was really nice because the flavors were all rich and clean. But really, you could go a bunch of different ways with this because its a casserole and thats what casserole do.

The stuff. You will need a can of chickpeas, a can of coconut milk (I used light coconut), some kale, an onion, and a butternut squash (you will only need about 3 -ish cups cubed so your squash doesn't need to be as big as mine was). Also need some garlic, raw hazelnuts, olive oil, coconut flour, and salt and pepper

Start by chopping the onion into small pieces and mincing the garlic. Add to a big pot with a little olive oil and get it on a medium heat to start to cook it all down. 

While the onions and garlic are cooking,  cube the squash. You probably only need the neck, so cut the bottom off (save for later) and peel the skin (also save for later , for soup or stock). Cut the peeled squash into mouth sized cubes.

And by the time you are done with the squash, the onion and garlic have had enough time cooking. Add in the can of coconut milk and the coconut flour. Stir in the flour and bring the pot to a boil, then turn heat down to medium again and let cook for a few minutes until it starts to thicken a bit.

Remove from heat and add in the squash, the chickpeas, and salt and pepper. Mix it all around.

Pour directly into the casserole dish filled with kale and give that all a good mix around.

Level it all out and top with the chopped hazelnuts.  Now into the oven it goes. 

And hour or so later, you have yourself a casserole ready for for your face.

Grab a bowl and dig on in.

P.S. We realized as we are eating that a really goof vinegary hot sauce or lime juice are perfect addition to this dish. So do that. 


Butternut Chickpea Kale Coconut Casserole Topped with Hazelnuts 

serves 3-5

  • 1 can light coconut milk
  • 1 can chick peas drained 
  • 3 ish cups cubed butternut squash
  • 1/2 bundle of kale (like 5 big handfuls chopped up)
  • 1/2 cup chopped raw hazelnuts
  • 1 onion
  • 2 tablespoons coconut flour ( can sub regular flour)
  • 4-5 cloves garlic
  • olive oil
  • salt and pepper 
  • Either vinegary hot sauce or a lime wedges (optional for serving)

preheat oven to 375

Start by chopping the onion into small pieces and mincing the garlic. Add to a large pot with a tablespoon of olive oil and place on a medium heat to start cooking. 

While the onions are going, peel and dice your squash. The easiest way to do this is to cut the neck off and then peel that. (save the peels and the base for soup) Dice the peeled squash into mouth sized cubes and set aside.

Once the onions are lightly cooked, whisk in the canned coconut milk and the coconut flour. Bring mixture to a boil then return to a medium heat. Cook for about 5 minutes or until the milk starts to thicken a bit. Add in the squash, the chick peas, and a teaspoon of salt and pepper. Mix together. Add in the chopped up kale and mix that it then dump it all into 3 quart casserole dish. Level it out and top with the chopped hazelnuts. Place the casserole into the oven and bake for 1 hour ( or a little longer for the crispier crunchy parts. 

Once you remove from oven, let sit for 5-10 minutes to set up and then call it ready. 

Serve with hot sauce and or lime wedges.

Any left over is great for a meal  within then next few days or frozen for a meal down the road

Split Pea Casserole

Just about every morning I wake up at the ass crack of dawn (actually its still dark out) make coffee, do a few things, usually read a bit while eating my breakfast and drinking my third cup of coffee, and start a pot of soup for lunch. All before 7am when I yell up to the mr. to get his butt out of bed.  I love it and I look forward to the mornings of me time.

So soup. I like to start the soup early and let it cook for a while. I start the soup, bring it to a boil, and then stick it on simmer with a ton of water. And then I am off for the day. The deal is that I leave, but the mr. leaves about an hour after I do and he will turn the burners off. And he has been so good about it. Sometime I might shoot him a text to make sure the burners are off, but most of the time I just trust.

Well about a week or so ago, I made soup, went about my morning. Upon my return home, before I even walked down the driveway, I could smell the burning soup.

 I rushed in just in time. The house was not on fire! But the pot of split pea soup… it was about to be. The pot consisted of about  three-inches of thick, burnt to a black brick, soup and about an inch of super thick burnt but still slightly green pea goop on top.

Now don’t judge me here, but that goop…. I ate it. And it was so good. I know, I sound kind of gross, but whatever I don’t care. That little bit of super thick burnt pea paste was some of the best burnt food that I have ever eaten.(I love burnt food)

So this casserole gets a bit of inspiration from that goop. No, it is not burnt to almost an inedible state, but it gets thick and a little crispy and is so so freaking good. This is one of those dishes that I will make and continue to eat even though I cannot possibly eat any more. It’s that good.

As for leaving the stove on while I am gone.. That's not really happening anymore.

The stuff.  Dried green split peas, some water, Italian spice blend as well as garlic and onion powder. Also salt and pepper, a bay leaf, carrots, an onion, a couple of potatoes, a chunk of cabbage, and a parsnip. All good, all of what I have in the fridge at the moment. 

Start by chopping up the onion and sticking it into a big heavy pot. Take all the spices and mix them together in a little bowl and dump half of them into the pot with the onion, the bay leaf and a splash of water. Place on medium heat and cook until the onions start to soften and the water has evaporated. 

After the onions have cooked a bit, add in the dried split peas and a bunch of water (split peas suck up water like crazy) Turn the heat up to high and bring the stuff to a boil then turn heat to a medium and place lid on pot. Let cook for a while, giving it a stir every now and then to make sure nothing is sticking and burning to the bottom of the pot

While the split peas are cooking, chop up all the veggies into mouth sized chunks and mix them together with the rest of the spices and toss them into a skillet or casserole dish. 

And the peas.. Once they are all falling apart, they are ready.  Now is also a good time to preheat oven. 

Dump the cooked split peas all over the veggie mixture and mix around a bit. Grab that last potato and slice really thin.

Top the veggies with the potato and sprinkle with salt and pepper. 

And into the oven it goes!

Bake until the veggies are all tender and the top is all crispy (about 35-40 minutes) and eel free to even stick under a broiler for an even crisper top.

Pull it from the oven when its ready and let it sit for a few minutes to set up a bit...

And scoop yourself a big helping and eat! All it needs is a fork (But mustard tastes so good with it too!)

Spit Pea Casserole 

serves 3-4

  • 3/4 cup dried green split peas
  • 3-1/2 cups water
  • 2 tablespoons Italian spice blend
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 bay leaf
  • salt and pepper to taste
  • 1 yellow onion
  • ¼ head of cabbage
  • 3  white potatoes
  • 2-3 carrots
  • 1 big parsnip

Note… I used the veggie that I had on hand. So say you don’t like parsnips, don’t use them or want to add celery, go for it. Just make sure to have at about 4-5 cups of chopped up veggies.

Take all the spices and mix them together. Dice onion into little pieces and stick into a big heavy bottom pot with half of the spice blend, the bay leaf, a few pinches of salt and pepper, and a splash of water. Stick on stove and cook for a few minutes until water evaporates and the onions are fragrant and starting to soften. Now dump in the dried peas and 3-1/2 cups water.  Bring it to a boil, then reduce heat to medium and place a lid on the pot. Cook the peas, stirring occasionally, for about 45 minutes of until falling apart.

In the mean time, dice up the veggies (leave one potato to top with)into mouth sized chunks and stick them in either a casserole dish or a 12-inch oven safe skillet. Mix in the other half of the spice blend

Preheat oven to 375

Once the split peas are done, take the pot and dump into the chopped veggies and mix around. Take remaining potato and slice thinly. Top the casserole with thin slices of potato and sprinkle with salt and pepper. Stick that bad boy  into the oven.

Bake for about 45-50 minutes or until the potatoes are crispy and the peas have thickened. 

Remove from oven, let rest for a few minutes, and serve it on up!
