Butternut and Beet Tacos

There come a point every year, about this time actually, when all of a sudden I am not exactly sick of, but maybe a little bored with the same roasted root situation. Don’t get me wrong, I love root veggies. I deeply love them all and will gladly keep on eating them for a few more months (it is only March after all so I am looking at at least 2 more good months of roots) but again, a little bored. So instead of just the usually roasted situation, we still roast but then, THEN, we taco them!. And we are not mad about it.

These tacos. Super easy and they bring out the best in roasted beets and butternut squash. Pilled in a tortilla (corn or flour, or not tortilla at all. Your choice) with some almond cream and topped with a crispy, crunchy, cabbage and onion slaw. A meal worth making any night or saving for a fun mid winter taco party. Or both because let face it, if you have a fridge like mine, it is packed with beets (and rutabagas, and turnips, and parsnips). And you probably have 4 butternut squash in your pantry too right? (Again, not mad about it.)

Now to the tacos!

The stuff. Some butternut squash, a few beets, shredded cabbage, half an onion, red wine vinegar, blanched and soaked almonds, a couple cloves of garlic, a little water, a lemon, salt and pepper, taco seasoning, an avocado, and tortillas.

Thinly slice the onion and toss it into a bowl along with the shredded cabbage, a pinch of salt, and the red wine vinegar. Really mix it up and then set aside.

Cut up the squash and the beets. 1/2 inch cubes are a good size.

Place the cut up squash and beets on a baking sheet. Drizzle with a touch of oil then really toss around with all the tacos seasoning.

Now into the oven to roast.

Almonds, garlic, salt and pepper, a little water, and juice of lemon, go into blender and blended until nice and smooth.

Oh almond cream. I could eat this entire bowl just like this, but don’t do that. You need it for the tacos.

Now it’s taco time. You have your roasted squash and beets, almond cream, quick pickled crispy cabbage and onion slaw, tortillas (store bought or hand made), and avocado. Lemon or lime wedges are also a plus.

And then you make a taco. Roosts first, almond cream next, slaw on top of that, finished off with avocado. Squeeze on the lemon and into you mouth it goes.

Butternut and Beet Tacos

makes 6-8 tacos

  • 2 1/2 cups diced beets (2-3 large beets should do it)

  • 2 1/2 cups diced butternut squash (peeled or not, up to you)

  • 3 tablespoons taco seasoning or (1 tablespoon each cumin and chili power plus 1 teaspoon each paprika, garlic powder, and onion powder. And a pinch or red pepper flakes)

  • 1/2 cup blanched almonds (soaked in hot water for an hour or so)

  • a lemon

  • 1/2 cup - 3/4 cup warm water

  • 2 cloves garlic

  • salt and pepper

  • Splash of oil

  • 3 cups shredded cabbage (red, green, or a mixture of both)

  • 1/2 an onion

  • 3 tablespoons red wine vinegar

  • avocado for serving

  • at least 6 small or medium sized flour or corn tortillas

Preheat oven to 450

Grab cabbage and onion. Thinly slice the onion and toss into a bowl with the shredded cabbage. Add a good sprinkle of salt and toss along with the red wine vinegar. Set aside but give it a good toss again before serving.

Dice up butternut squash and beets into 1/2 inch cube pieces. Place on baking sheet with a drizzle of oil and toss around along with the spice blend. Place into oven to bake for about 30 minutes.

While that’s roasting, strain almonds of soaking water and place into blender along with the 2 cloves garlic, the juice of the lemon, and 1/2 cup water. Blend until smooth. Add in a pinch of salt and pepper and blend. If the mixture is to thick, add in more water to thin it out. You want it to be like a sour cream consistency.

And when the squash and beets are nice and tender, remove from oven.

To assemble tacos.

Scoop some of the roasted beet and squash mixture onto a tortilla, add a good dollop or two of the almond cream, then top with some of the cabbage and onion slaw. Top it of with some sliced avocado and serve with a wedge of lemon or lime.

 Butternut Squash and Lentil Tacos with Jalapeño Avocado Mousse

There are just some things in life that are always right, like puppies, rainbows, human decency, or the smell of  springtime flowers. And tacos. Tacos are always right. Seriously, have you ever meet someone that doesn't enjoy a taco of some sort, of some variety? Everyone has a taco, that is a fact. (Even if you skip the tortilla and go straight for all the fillings like me.)

And if you are like me, lentils and butternut squash are always right too. So are all the veggies and  the avocado. Together all this goodness makes for one amazingly fantastical, very right taco. 

We all need a little bit rightness in our lives right now. Why not start with dinner. 

The stuff. You got to get lenitls, butternut squash, cumin, chili pepper, salt and pepper, and olive oil. Also kale, red onion, cabbage, avocados, a jalapeño, limes, and garlic. And you need something to stick it all in, so flour or corn tortillas. 

Start with making the veggie slaw. Basic here, just chop up the kale, onion, and cabbage into small thin pieces.

All that veggie goodness goes right into a bowl with a sprinkle of salt and the juice of a lime. Give it a good toss to coast it all and set aside to do it's magic. The longer it sits, the better it gets.

Now to roast the squash.  Dice it into small mouth sized pieces. I usually don't peel, but most people do and the mr has been avoiding he peel when he eats the squash so I peeled it (and roasted it and ate it myself) 

Toss the squash in a drizzle of olive oil and the cumin and chili powder and a little salt and pepper.

Raw squash goes into a preheated skillet (or baking sheet) and roasted until browned and tender.

Squash meets lentils and it is good. So so good.

And don't forget the jalapeño mousse. . Dice the jalapeo and the garlic and toss into a blender (or jar to use an emulsion blender) with the avocado, juice of a lime, a sprinkle of salt,  and a little bit of water.

 Butternut Squash and Lentil Tacos with Jalapeño Avocado Mousse

make about 6 tacos 

  • 1 1/2 cups cooked french lentils
  • 1/2 of a small butternut squash (about 3 cups cubed)
  • 1 tablespoon cumin
  • 1 teaspoon chili powder 
  • salt and pepper
  • olive oil
  • 2-3 large kale leaves
  • 1/4 head of cabbage
  • small red onion
  • 2 limes
  • 1 large or 2 tiny avocados 
  • 2-4 tablespoons water cup
  • 1 jalapeno
  • 2 cloves garlic
  • 6 small  flour or corn tortillas 

Grab the kale, cabbage, and red onion and thinly slice and dice into small pieces. Place into bowl, sprinkle with 1/2 teaspoon salt and add in the juice of a lime. Give it all a good mix around and set aside. 

Preheat oven to 450.  Place your cast iron skillet or baking sheet in oven while preheating.

Take squash, peel the skin off (if you want) and cut into cubes about an inch big. Place in a bowl and toss with a little olive oil and the cumin and chili powder. Sprinkle a little salt and pepper in and toss it all around. When the oven is preheated, carefully remove the pan and dump the squash in it. Evenly disperse the squash then place the pan back into the oven and roast squash until browned and tender, which takes about 25 minutes. 

When the squash is done, remove and dump into a big bowl along with the lentils.

While the squash is roasting you can go ahead and make the avocado mousse. Scoop avocado fruit into a bowl  or blender and add in the jalapeño (seeds and ribs removed) and the garlic. Add in the juice of a lime and 2 tablespoons water. Blend until smooth. Add in more water to thin out to desired consitancey. 

Now you have everything ready to taco. Grab your tortillas and heat them up if want and start to pile it all on. Lentil squash mixture, a good handful of the veggie slaw, topped with a dollop or two of the avocado mousse. Now you got yourself a taco and it's ready for your face.

Lentil Tacos with Garden Veggie Salsa

HEY Hey Hey… It's Taco TUESDAY, which means that you are obligated as consumer of food to eat some tacos today!

So ok, I am not going to lie, these tacos were not actually made on a Tuesday (GASP) but were made in lu of pizza Friday (another GASP!!) 

But guess what? No one died. People were happy. Food was fantastic, and there was no mention of the pizza that was not.  So sure, taco tuesday is totally a thing around here, but  you know how "Nobady puts baby in a corner"..  well nobody buts tacos in a corner. We don't let the day of the week depict when tacos are eaten cause we think tacos are for everyday!

And these tacos, well, I got down with these. Made with lentils, cause lentils are the best, and topped with a hearty scoop of super fresh, chunky veggie salsa…. Not much is better then that. Easy and fast with lots of pretty in every bite, these tacos are a great addition to any taco dinner rotation!

Now lets get taco-ing!!!

The stuff. First off, you are going to need some type of taco shell.. soft or hard or both , that is entirely up to you.( I made taco shells a little early in the day, but store bought is totally cool.) Also need lentils, water to cook the lentils, a jalapeño (optional), taco seasoning (pre blended or your own blend) and onion. Also needed is a gigantic tomato, some red cabbage, a few kale leaves, a lime, and salt and pepper.

To get this party started, chop up half the onion, the tomato, cabbage ,and kale and toss into a big bowl. Oh, and chop up the cilantro and toss that in as well.

Sprinkle with salt and add the juice of the lime. Mix oh mix and set aside to let all the flavors meld.

Now that the salsa is doing it's thing, chop up the jalapeño and the other half of onion and toss into a big skillet and place on medium heat.

And when the bits start to brown like so...

Dump the lentils in to the pan with water.Bring it all  to a boil then turn heat down to low.. Add in the taco seasoning and sprinkle of salt and pepper and place some type of lid on ithe pan.

And simmered until cooked.

Note. Check the lentils every few minutes while they are cooking. If you think they seems to dry, add in another 1/2 cup of water.

Now it's ssembly time! Lentils in shell, topped with a generous amount of  salsa. That's it! Maybe some guacamole would be nice (I had an avocado saved for guac, but it was rotten on the inside.. I was super pissed) But with or without, these are some freak yeah yummy tacos! I served my next to a bed of some jasmine rice which was nice, but do what you want my friends.

Lentils Tacos with Garden Veggie Salsa

Makes about 8 -10 tacos

For the Lentil Filling

  • 1 cup dried lentils
  • 2 1/2 -3 cups water
  • 2 tablespoons taco seasoning*
  • 1/2 of an onion
  • 1 jalapeño 

Fot the Garden Veggie Salsa

  • 2 big tomatoes (or one gigantic tomato)
  • 1/4 head of red(or green) cabbage (about 2 cups shredded)
  • 1/2  of an onion
  • 4-5 kale leaves
  • 1 juicy lime (2 if they are not very juicy)
  • a bunch of cilantro 
  • salt and pepper

And don't forget the taco shells!

*Note. You can use any type of taco seasoning that you like, store bought or home made. I make my own with cumin, chili powder, onion powder, garlic powder, and a little coriander. 

Dice the tomato and 1/2 the onion into small chunks and toss into a big bowl. Finely chop the cabbage an the kale into small shreds and toss that into the bowl. And chop up as much cilantro as you would like and that goes into the bowl as well. Spinkle with some salt and add in the juice of the lime.  Mix everything all around and set aside.

Once the salsa is made and sitting, chop the jalapeño and other half of onion and toss into a large skillet. Place on medium heat for a few minutes until the pepper and onion start to brown. Now dump in dried lentils and 2 1/2 cups of water. Turn heat to high and bring to a boil, them back down to low. Seaosn with salt, add in the taco seasoning, and stick a lid (or cover with something), and let simmer for about 20- 25 minutes or until the lentils have absorbed  all the water and are nice and soft. If you find the lentils are still hard and there is no liquid, , add in another 1/2 cup of water. 

Once the lentils are cooked to your liking, remove from heat and get assemble tacos. 

Scoops some lentil mixture into shells. Add on a big scoop of the fresh veggie salsa and eat with you face.

Guacamole, cheese, sour cream, or whatever are optional topping that you may consider adding but are definitely not necessary.  .
