Maple Mustard Roasted Cabbage with Almonds

There is something about purple cabbage that makes me feel like I need to share it. It sounds weird , especially because I eat about a head of cabbage a day, but that is green cabbage. I barely buy purple cabbage because it cost twice as much and I really like green , but at farm share when you get to pick what color you want, I alway pick the purple. ( Side note. I used to call it red cabbage but have since stopped because it is very clearly purple and calling red just doesn't make any sense) 

I also feel the need to do something a little more the chopping it up and eating it raw. So I make a little fancy. pretty, almond crunchy mustard type thing because that's what I was feeling and I figure the mr would like it too. Note that I ended up using half a green and half  the purple because color is nice and also I ended up eating the other half of the purple before I could share it. But I caught myself before eating it all to may face and was proud of myself for thinking of others.  

This dish is good, really really good. . It has roasted cabbage which is alway great, but slathered with maple mustard and crunchy almonds.. it's just freaking fantastic in all the ways. It also happens to be super easy to prepare and with minimal ingredients. It makes for a great side dish, a main dish, and is great for sharing during the holidays that are just around the corner. Or if you are like me, not sharing and eating all afternoon long. (I did save some for the m for dinner because I am so nice)

The stuff. Cabbage, red or green or a bit of both, stone ground mustard, maple syrup, almonds and pepper.

Easy peasy. Cut the cabbages about an 3/4 inch thick and lay them on a baking sheet. Pop it into the oven once it's preheated.

While thats going on, mix some maple with the mustard and chop up the almonds.

After about 25 minutes, pull the cabbage out and flip them. Cover the top with maple mustard and sprinkle on the almonds. Stick the cabbage back into the oven and bake another 10-15 minutes, or until it's roasted to your taste preference (I like it really roasted)

Serves from a baking sheet but would look so lovely on a nice plater, you know, if you want to be extra classy. 

This cabbage situation is all of it.

Maple Mustard Roasted Cabbage with Almonds 

Makes about 6-8 slabs

 

  • 1 head of cabbage (red or green or half of both)
  • 1/4 cup stone ground mustard
  • 2 tablespoon maple syrup 
  • 1/3 cup raw almonds 
  • pepper to taste. 

Preheat oven to 425

Slice cabbage into thick slabs about 3/4 inch thick. Try to get them roughly the same thickness so they roast evenly.  Lay the cabbage on a baking sheet, not overlapping, and stick into the oven once it's preheated. Bake for 25 minutes or until the bottoms of the cabbage are crispy.

While cabbage is roasting, mix mustard and maple  together and roughly chop the almonds.  

After  the 25 minutes, grab the cabbage from the oven and flip each piece. Cover the tops with the maple mustard and sprinkle on chopped almonds. Place back into the oven for another 10-15 minutes  and roast until the cabbage is as crispy as you like it.

Remove from oven, sprinkle with good pepper, and serve. Extra maple muastd is welcomed to some. Any left over (but there won't be any) is great eaten cold before bed  or tossed onto a salad for lunch the next day.

Whole Wheat Carrot Crackers

The mr has a thing for crackers, like if I were to name his top five foods, crackers would probably be in the top three. So I try to be a nice girly friend and make him some crackers ever now and then. (He says my crackers are the best) I usually make plain or dill pickle ones for him , but last time I asked if there was any other kind he wanted me to make. He named off a bunch of weird shit but also few good ideas and one was carrot. Sounds about right.

A couple of days ago I was feeling like the mr needed some crackers. I figured it was a good time as any to try out carrot crackers because Easter,bunnies, carrots.. You can see where I am going with this right?  Plus I have like 20 pounds of carrots in the fridge so yeah.

Full disclosure. The mr, he really like the crackers so that's good and what counts.  Alex, my 12 year old nephew said they tasted like cat food. But he knows nothing.

The stuff. White whole wheat flour, carrots, salt, olive oil , and water.

Chop up carrots and place into a pot with water. Onto a medium heat to steam away and get all tender.

Once cooked the carrots get blended.

The carrot puree along with the oil get mixed into the flour and salt. The mixture then gets lightly kneaded into a uniform ball and .Let to rest in the bowl for about 5 minutes.

Roll the dough out to about 1/8 inch thick.

Cutting the shape is a personal choice. I went with triangle because they kind of look like carrots?.. But any shape will do. After you cut them up, take a fork and pierce each cracker a few times to avoid air pockets while they are cooking.

Onto a baking sheet. No need to leave as much space as I did, they don't expand any.  Once you sheet is full, give those crackers a nice sprinkle of salt and get them into the hot oven and cook to cook. 15-18 minutes should do the trick.

And then you pull them from the oven and let them cool.

Now you got yourself some cracker.

Whole Wheat Carrot Crackers

  • 1 cup chopped carrot (about 1 1/2 carrots)
  • 1 1/2 cups white whole wheat flour
  • 1 cup water
  • 3 tablespoons olive oil
  • 2 teaspoons salt plus more for sprinkling

Place chopped carrots and water into a pot with a lid and place on a medium heat. Cook until the carrots are tender. When they are, puree them with the blender of your choice. You should end up with a cup of puree but if you end up with a little less, add water to make a cup. Too much and you can just eat the extra.  Add the oil to the puree and mix

In a medium bowl mix flour with the salt. Add in the wet and mix until a dough forms. Dump onto counter and knead into a uniform ball. Place dough back into bowl to rest for a few minutes.

Preheat oven to 350

Place dough on a lightly floured surface. Roll out to about 1/8 inch thick then cut into whatever shape you want to eat your crackers in. Take a fork and stab a few holes into each cracker if you want to avoid air pockets (the mr likes the air pockets)  then sprinkle the crackers with salt. Place on a baking sheet. You don't want them touching but can be packed closely.. Into the oven for 15-18 minutes or until the bottoms are golden brown and have a slight crisp when broken. Remove and let cool..

Now Eat. With peanut butter, jelly, cheese or chocolate. This crackers are good for anything you eat with crackers.

Left over crackers can be stored in a airtight bag or container and will last for a week or so. If they start to get a little stale, just pop them back into the oven for a few minutes.

Spinach Asparagus Springtime Salad

As I was sitting at the table making this simple little ode to spring salad, it started to snow outside. "Look away", I told myself. "Pretend you didn't see it." Well, I saw it then, saw it before bed, and when I woke up this morning , there was (and still is)  a few inches of fresh white covering up my hopes of a warm spring day. I have to admit that it is really very pretty, but what the hell.

This salad is all spring. Fresh spinach from the farm, asparagus in abundance every store I go to. Simple, crisp, refreshing. A nice change from a winter heavy with roasted roots and thick stews. I don't know about you, but this is the time of year that all I want to eat are fist fulls of fresh green stuff. (I could insert a picture here of me sitting on the couch munching away from a bag of baby kale, but I won't. You don't need to see that)

Now if it would just stop snowing and be spring for real, that would be great.

The stuff. Fresh spinach. tender asparagus, a lemon, and salt and pepper..

Snap off the woody ends of the asparagus then dice up the rest.

Toss the chopped up asparagus in a bowl with spinach. Squeeze the juice of the lemon all up in that and sprinkle with salt and pepper. That is it.

Fresh, green, springtime goodness in a bowl.

Spinach Asparagus Springtime Salad

  • 2 large handfuls of fresh spinach
  • 10 ish spears of fresh asparagus
  • 1 lemon
  • salt and pepper

Wash and dry spinach ans place in bowl. Snap off woody end of asparagus (I save this bits for soup) and chop up the rest into mouth sized pieces. Toss the chopped asparagus into bowl with spinach. Squeeze on the juice of the lemon and sprinkle with salt and pepper to taste.

Eat.

Straight Up Zucchini

Summertime is here, which means the days are long and hot, the drinks are cold and sweaty, and for the most part, people seem more relaxed and happy. And it also means we are growing and getting the bestest and freshest produce, including zucchini.

Yes! it's zucchini time!

You might remember from last summer that I am kind of a zucchini junky. As soon as it starts to grow, I am eating/ hoarding it. I grow it, get tons from my farm share, and will happily take any or all of your extra zucchini that you can't seem to eat. (I take all veggies for that matter) All of the surfaces in my house are covered with baskets full of zucchini. Open the fridge, a few zucchini will most likely fall out. Want to sit at the table to eat, you are going to have to move the mounds zucchinis to get to it. (No joke) It's just so dang good and can be made into just about anything.

But with all the recipes with zucchini, all the ways to add it to this or make it into that, I think people tend to forget that zucchini can be just that, zucchini. Yes it is good to noodle with sauce or puree up with lentils, but honestly I think my most favorite way to eat it is just as it is, straight up raw zucchini, maybe a sprinkle of salt and pepper and if I have it on hand, a squeeze of lemon of a splash of vinegar. Nothing fancy (although you can make it look fancy) The best of summer,  pure and simple.

So not really a recipe here, just reminder that sometimes simple can be the best and that zucchini can be eat plain and raw and that it's delicious.

Keep it cool. Keep it simple.

Straight up Zucchini

  • fresh zucchini
  • salt ,pepper
  • lemon juice or vinegar (optional)

cut zucchini (if you feel like cutting it) anyway you want. Place on a plate and sprinkle with salt, pepper and a splash of vinegar or lemon juice.

Eat.

Arugula Peach Salad with Almond Dressing

I think I am a salad wizard. Give me some greens and a few simple, maybe not conventional ingredients, and wa la.. A freaking amazing, yet simple salad to please and appease all us salad eating people.

Some might say that fruit in salad is not right (the mr says that... pa-lease dude) but those folks are wrong. Fruit for sure belongs and brings a whole new world of flavor combinations. For this bowl of salad magic, we are going with spicy arugula paired with sweet peach, a nice crisp bit and tangy onion, topped with creamy, nutty almond butter dressing It hits all the flavor note: sweet, spicy, creamy, and a little acidic with the help of a lemon. What more can you ask for? (I would like to ask for a million dollars and a pair of metallic gold high tops.. if we get to ask for more) This is another winner in the my salad game.

Sure,  you are going to eat this for dinner, but as I am sitting here I am thinking this would make me happy to eat for breakfast. Think about that. (salad for breakfast is a thing)

The stuff. A big bowl of fresh and clean arugula, a ripe, but firm peach, half a sweet onion, almond butter, a lemon, a little tamari, a bit of honey, pepper, a splash of water, and some almonds.

The peach and onion get sliced super thin

And tossed into the bowl with the arugula. Take half of that lemon and squeeze the juice all over and toss around with a good bit of cracked pepper.

And for the dressing, just mix together the almond butter ,the juice of the other half of lemon, the tamari, and the honey. Add in enough water to thin it out enough that you can drizzle it on to the salad

The drizzle it all over. And go ahead and chop up some almonds and toss those in as well.

Share it or don't (I say don't)

A fresh,sweet and spicy salad to get this summer started.

Arugula Peach Salad with Almond Dressing

serves 1 hungry person or 2 side salads

  • A few big handfuls of fresh arugula (about 5 oz)
  • 1 ripe, but firm peach
  • 1/2 a vidalia (or any sweet) onion
  • 3 tablespoons almond butter
  • 1 lemon
  • 1 teaspoon tamari. (soy, or liquid amino's work too)
  • 2 teaspoon honey or maple
  • 1-2 tablespoons water
  • cracked pepper
  • a few toasted almonds (optional)

Place clean greens in a big bowl. Thinly slice up onion and segment and thinly slice up peach. Toss into bowl with the arugula. Squeeze in the juice of the other half of lemon, crack in some pepper, and give it all a good toss.

Now for the dressing,. Grab a small bowl and mix together the almond butter, honey , tamari, and the juice of half the lemon. Once that's all mix together, mix in a little water until the sauce is thin enough to drizzle. (start with a tablespoon and add more if needed)

And now dress the salad. Drizzle and toss the dressing all over the salad and toss in a handful of chopped almonds. More pepper if you like. 

All you need to do now is eat it.
