Sweet Potato Hand Pies

What, you did’t skip an afternoon of life to stay home avoiding all the things that need to be done to watch the snow gently fall with the twinkle lights on, Sufjan Stevens Christmas playing and make little hand pies? Well shit, maybe that is exactly what you should do because I got to tell you, it was probably one of the best afternoons I have had in a while.

And don’t get at me about the Christmas music. Sufjan Stevens Christmas is one of the things I look forward to the most about this time of year. If you know, you know. If you don’t know, then stop what you are doing and go listen to it. Trust.

These little hand held pies are perfect for the upcoming holiday season, but anytime really. Crispy flaky pie crust filled with spiced sweet potato the is creamy and custard like then topped with a nice chocolate drizzle. All packed nicely into a square that you can eat without plate or fork plus they pack up so nicely (they make great gifts) and are just really freaking amazing. I made a batch and basically the mr and Barb fought over who was going to eat them all because they were just that good. And the mr isn’t even a sweet potato fan. (When will he realize he likes all food?)

Anyway, Take a couple hours and listen to Sufjan Stevens, watch it snow (if you can get it to do that), and make these hand pie, It will make you happy.

Now to the hand pies!

The stuff. For the dough you need flour, salt, brown sugar, ice water, and a stick of frozen vegan butter. (I use country crock vegan butter and it is AMAZING for pie crust). For filling it is baked sweet potatoes, cinnamon, ground ginger and nutmeg, and maple syrup. Also need chocolate chips and a little coconut oil for a nice chocolate drizzle.

Make dough. Whisk together the dry and grate the butter into it. Toss around with a fork and drizzle in ice water, a tablespoon at a time, until dough looks a little shaggy but can kind of smoosh together into a dough. Dump the dough out onto a piece of plastic wrap and gather together into a tight disk. Wrap completely and place into fridge to rest for about an hour. Also can be made a day or two in advance.

Filling. Just scoop baked sweet potatoes into a bowl, add in the spices and maple, and blend (use a hand blender or normal blender) until mixed and smooth. You could actually just mix it with a fork too if you want, just won’t be as smooth.

Once dough has chilled, place on a lightly flour surface and roll into a large rectangle roughly 12x14 inches.

Cut down the center then each side into 4 rectangle pieces.

Scoop filling onto each piece, fold in half and crimp the edges closed with a fork. Poke the tops so they don’t explode, and place on a baking sheet. Once they are all filled and on the beige sheet, pop them into the fridge for about 15 minutes and preheat oven to 350.

Once oven is hot, into the oven they go. Bake for about and hour, give or take a minute or 5.

Now would you look at that. Golden brown and damn near perfection. Get them off baking sheet and onto a metal rack to cool.

While they are cooling, make up a little chocolate drizzle situation. Chocolate chips and coconut oil. Just pop into microwave (or do it on a stove) for 30 second increments until mostly melted. Stir around until smooth and drizzle able.

Then drizzle, all over. Make it nice!

That is it. You now have hand pies and you now eat one.

Sweet Potato Hand Pies

makes 8 hand pies

  • 1 1/2 cups all purpose flour

  • 1/2 teaspoon salt

  • 1/3-1/2 cup ice water

  • 1 stick or 8 tablespoons vegan butter, FROZEN (country crock vegan butter works amazing, but so does earth balance)

  • 1 tablespoon brown sugar

  • 1 1/2 cups sweet potato puree (Around 2 large baked sweet potatoes)

  • 1 tablespoon maple syrup

  • 1 1/2 teaspoon cinnamon

  • 1/2 teaspoon ginger

  • pinch of nutmeg

  • 1/3 cup chocolate chip

  • 1 teaspoon coconut oil

Start by making dough. Whisk together the flour, brown sugar, and salt. Take the frown stick of butter and grate it into bowl. (Frozen grates so much better). Mix gently with a fork while drizzling in ice water until the dough starts to look shaggy. Grab a clump and smoosh it together. If it completely crumbles, add a little more water until it can smoosh into a dough. Dump it out onto a piece of plastic warp and pulling up the sides, gather it into a tight disk. IF it is still really crumbly, toss in another tablespoon of water. Wrap the dogs tightly and smoosh it into a rectangle and then place in fridge for about an hour. Can also be made a few days in advance.

For filling. Blend together sweet potato puree, the spices, and the maple syrup until smooth.

To assemble. Roll out chilled pie dough into a rectangle around 12x14 inches. Cut the half the long way down then cut each side into 4 equal sized rectangles. Take the filling and place about 2 tablespoons onto the end, leaving a little lip, of each rectangle. Fold in half and with a fork, feel the edges. Poke the tops with fork. Place the assembled pies on a baking sheet and pop the sheet into the fridge for 15ish minutes.

Preheat oven to 350.

After the fridge and when the oven is hot, pop the pie into the oven. Bake for about 60 minutes or until the crusts are golden brown and bottoms are a nice dark(not burnt) brown.

Remove from oven and place pies on wire rack to cool.

For chocolate drizzle just place the chocolate chips into a microwave safe bowl with the coconut oil. Heat for about a minutes or so until the chips start to melt and then mix together until it is smooth and drizzlable. Now drizzle the chocolate all over cooling pies.

And that is it. You can let the pies cool completely and the chocolate will set so it won’t smear, but you can also jus start eating them.

Pies are good for 4-5 days left on counter but really, they will not last that long.

Cranberry Coffee Cake

A cake. Do you really need a reason to make a cake other then you want to a) make a cake, b) eat cake, or c) make a cake for other people to eat. Sure it is the holiday season and we want pies and desserts and blah blah blah, but it is also do whatever feels right to you in the kitchen season and if cake feels right, well then cake so be it.

I was option c), wanting to make a cake for other people to eat, mostly for the mr to eat. I haven’t really baked much of anything the past few weeks (besides a lot of bread) and basically just wanted to make him something that I knew he would really like. (I know, I know, I am the best!)

Cranberries. Very appropriate this time of year and plus I just bought 5 lbs (to freeze and eat in handfuls frozen or to add to soup) and the mr really likes tart things so cranberry coffee cake it was. A dang good cake if I do say so myself. Dense and moist and rich and covered in crumble and drizzled with lemon glaze. Looks good and smells good and tastes better then that.

The mr. was glad for the cake, so glad in fact he ate almost half of it in a day. Then the other 1/4 the next day even after I yelled at him to not eat all but I think by now, it is gone. He really, really liked it. (He kept telling me how “freaking GOOOOD” it was. I know dude, I know.)

Now to the cake!

The stuff. All purpose and white whole wheat flour, baking powder and soda, salt, ground ginger, brown and white sugar, oil, vanilla, apple cider vinegar, plant milk, and cranberries. Also more flour, brown sugar, cinnamon and vegan butter for crumble and a lemon and powdered sugar for glaze.

Start with the wet. Add both brown and white sugar to a big bowl along with the oil, vanilla, vinegar, and half the milk. Mix together until completely incorporated. In a separate bowl, whisk together the flours, baking powder and soda, salt, ginger, and the zest of a lemon. Dump the dry into the wet, add the rest of the milk, and mix until everything is completely incorporated. But don’t over mix or the batter will get tough.

Lastly, fold in the cranberries. So Pretty!

Real fast make the crumble topping. Just mix together the flour, sugar, cinnamon, pinch of salt, and mix with a fork until completely combined and is kind of crumbly.

Batter gets dumped and leveled into a well greased tube pan and the crumble gets crumbled all over the top of the batter.

And into the oven it goes, 50-60 minutes or until a tester poked into the middle parts comes out clean.

Cake is done. Now pop it from pan and let it cool.

While cake is cooling, mix up the powdered sugar and lemon juice to drizzle.

Cake is cool enough to drizzle so drizzle that drizzle.

You now have your cake go on and eat it.

Cranberry Coffee Cake

Makes one tube cake (can also be baked in a 9x9 pan)

  • For the Cake

  • 1 cups all purpose flour

  • 1 cup white whole wheat flour (or sub AP)

  • 1/4 cup white sugar

  • 1/2 cup brown sugar

  • 1 teaspoon each baking powder and soda

  • 1 teaspoon gound ginger

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla

  • zest from a lemon

  • 1 cup plant based milk

  • 1 tablespoon apple cider vinegar

  • 1/2 cup neutral oil

  • 1 1/2 cups fresh (or frozen and thawed) cranberries

  • For the Crumb Topping

  • 2/3 cup brown sugar

  • 2/3 cup flour

  • 3 tablespoons vegan butter

  • 1 teaspoon cinnanon

  • pinch of salt

  • For the Glaze

  • Juice form 1/2 a lemon

  • 1/2 of powdered sugar

Preheat oven to 350

In a large bowl mix together the brown and white sugar, oil, vanilla, and vinegar. Add in about 1/2 the milk and mix. Then In a separate bowl whisk together the flours, baking powder and soda, salt, ginger, and the zest of a lemon. Dump the dry into the wet and mix, adding the rest of the milk to the batter. Once batter in cohesive, dump in the cranberries and fold them in. Dump (it is a thick batter) into a well greased tube or burnt pan and level out.

Place all the stuff for the crumb topping into a bowl. Mix together with a fork until completely incorporated. With your fingers evenly crumble the mixture onto the top of the cake batter.

Place cake into preheated oven and bake for 50-60 minutes or until poked with a tester and it comes out clean.

Once baked, remove cake from oven and carefully remove from pan. Place on metal rack and let cool.

While cake is cooling, mix up glaze. Powdered sugar and juice of half a lemon get mixed until smooth and runny, but not to runny. If it is to runny, add a teaspoon or so more sugar to thicken up or if to thick, a touch more lemon. Think drizzle-able.

Once cake is cool enough, drizzle the lemon glaze all over.

And then that is it. You now eat it. For breakfast of dessert and any time in between.

Cake can be left, covered, on counter at room temp for 3-4 days. You can also freeze pieces of it but really, just eat it all and make a new one when the mood strikes for cranberry cake.

Butternut Squash Apple Soup

Soup makes everything better and that friends is a fact. Seriously think about it. When you are cold, a hot cup of soup will warm you. Are you hot, a cold cup a of soup will cool you down. Feeling a little sick or a bit blue? Of course you need soup. And if you are happy as a calm, well soup will just make you happier. There is not one situation were soup doesn’t enhance the situation. Unless it is shitty soup. Or you asked for pizza and got soup, But pizza soup..I bet you would like that.

This butternut squash apple soup is not shitty, it is fantastic so you are good. Creamy and lush and packed full of flavor without being overbearing. It feels indulgent but it is not for it is made of basic ingredients that may sound a little simple, but sometime simple is all you need to really pull a deliciously flavorful soup together. The butternut, when blended, gets super thick and creamy. The apple adds a nice brightness and depth, and there is onion and spices to round it all out. It is just a great soup. And even better for me, I made it the other day when I woke up to the first snow. It really was the best just looking out the window, seeing snow, eating soup.

Now to the soup!

The stuff. Butternut squash, a couple apples, an onion, ground ginger and thyme, apple cider vinegar,a couple cloves of garlic, and salt and pepper. Red pepper flakes if you want a little heat.

Start by dicing up the onion and garlic. Small pieces are good so you don’t need to be fancy. just cut it up and toss it into a big pot along with the ginger and thyme. Place on the stove on medium heat, add a splash of water, and let it start to cook down.

Now apples. Remove cores and chop 3/4 of the apple into chunks. Reserve a piece and cut into thin pieces. Place the pieces into a bowl and dump the apple cider vinegar on top.

And now the squash. Peel or cut skin from flesh (I have left the skin on before but it gets a little creamier without it so I cut it off and roost the skin separately… The skin is my favorite!) then cut squash into smaller cubes.

Once the onions soften up a bit, add in the squash and apple. Add in water and season with a pinch of salt and pepper. Bring heat to high and get water boiling, then place a lid partially on pot and turn heat to medium again. Let cook for about 40 minutes.

Tender and falling apart. A few minutes before you take it off the heat, pour the apple cider vinegar from the reserves apples into the soup.

Now it just needs it to be blended. (Immersion or regular blender in small batches will do the trick)

Blended and creamy dreamy good.

All is left to do is grab a bowl, ladling in soup, top with some sliced apple, a pinch of red pepper, and lots of black pepper.

Spoon? Why yes, that would be great.

Butternut Squash Apple Soup

makes 4-6 serving

  • 1 small butternut squash (about 4 cups cubed)

  • 2 Macintosh apples

  • 1 large onion

  • 2 cloves garlic

  • 1/4 cup apple cider vinegar

  • 3 cups water

  • I teaspoon dried thyme

  • 1 teaspoon ground ginger

  • red pepper flakes (optional)

  • salt and pepper

Start with the onion. Remove skin and dice it up into smallish chunks. Grab garlic, remove skin and cut into small pieces. Place it all into a big pot. Add in the thyme and ginger and add a few splashes of water just to wet the onions. Put the pot on stove on medium heat to start to sweat the onions.

Now grab apple. Remove cores. Take about 1/4 of a apple and cut into long thin pieces and place into a small bowl. Dum in apple cider vinegar and set aside. Cut the remaining apple into chunks.

Squash. Cut away or peel the skin, cut in half and remove the seeds (keep both the seeds and skin to roast and eat later) and cut the flesh into chunks.

Add the cut up squash and apple to the pot with cooking onions. Add in water, stir around, and turn heat to high. Once the soup starts to boil, partially place a lid on the pot and bring heat back down to medium. Let cook until the squash is tender and is starting to fall apart, which should take about 40 minutes. A few minutes before you take the soup off the heat stir in the apple cider vinegar from the cut up apples.

Once everything is cooked through it just needs to be blended either with a immersion blender or a regular blender. IF doing a regular blender, just be careful and do it in batches so you don’t burn yourself. Blend until smooth. Taste it and check for seasoning (salt and pepper).

And then you eat it. Ladle into bowls, sprinkle with pepper and red pepper flakes and top with a few pieces of pickled apple slices. Spoon to soup to face.

Johnny Cakes (AKA Cornmeal Pancakes)

Recently I went through my pantry, did an inventory of what I have, what I am out of, and what needs to be used up.

This is a reminder that we all should be doing this, especially now if you are a cold weather/holiday cook and or baker. Get a head start, make sure you can find flour and sugar, and make sure your baking powder and sodas are active!

My pantry is pretty freaking well stocked if I do say so myself. One thing I like to do though is use up ingredients that are not super staples (like cornmeal) before I buy more. And I was low on cornmeal so I figured I would just use the rest up for dinner and pick up a fresh bag during the next grocery shop. I was planning on making a pan of baked cornbread but time got away from me and it was too close to dinnertime for me to bake. So I grabbed a skillet and made cornmeal pancakes instead.

Just as good, if not better (I would say better) then cornbread. Crispy, soft, rounds of perfection. Eaten by the mr who claims he doesn't like cornbread( he really liked these🤷‍♀️) and took all of 8 minutes from start to finish for dinner. And now I will probably be making these way more often now because these little pancakes are perfect for serving with soup and chili. And I did get a fresh bag of cornmeal so I am all good to go!

To the cornmeal pancakes.

The stuff. Cornmeal, white whole wheat flour, salt, baking powder, honey or maple, olive oil, and boiling water.

Simple here. Cornmeal, honey or maple, and oil into a bowl. Mix in hot water until completely incorporated. Let sit for a minute or two then add in the flour salt ,and baking powder. Mix til combined.

Batter into a hot skillet to cook, just like you would expect. Each side cooked until golden brown.

Look at that color. Cooked to perfection.

Place them on a wire rack instead of a plate as you make them, if you care about keeping them crispy.

Then you eat them. Anyway you like. You can go the sweeter route and pour some maple on a stack or smear some jam on top. Or savory like I did here, topped with tomato stewed chick peas and avocado mousse. OR just eat them straight up hot, warm, or cold.

They are good all the ways.

Johnny Cakes (AKA Cornmeal Pancakes)

makes 8-10 pancakes

  • 3/4 cup cornmeal

  • 1/4 white whole wheat flour

  • 1/2 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon honey or maple syrup

  • 2 tablespoons oil plus more for skillet

  • 1 cup boiling water

Place the corneal, honey or maple, and oil into a medium sized mixing bowl. Dump in the boiling water and stir until everything is combined. Let sit for 2 minutes. Add in the baking powder, salt, and flour and mix install incorporated.

Grab a skillet and heat to medium on stove.

Once skillet is hot, add a touch of oil to evenly coat the bottom. Scoop batter into pan with a spoon and spread into a round that is no thicker then 1/2 inch. Cook for 3-4 minutes of until the bottom is golden brown. Flip and cook other side until golden brown. Place cooked cakes on a wire rake to keep crispy.

Eat right away, sweet of savory or plain as they are. Left overs are great, just place them in an airtight container for up to 4 days. Can be reheated to crispy perfection in the oven or in a toaster!

Chickpea Carrot Ginger Fried Rice

Rice is a hit or miss in this house. Whenever I make it fresh, I either make too much or not enough so I like to air on the side of too much because when there is too much, you just save for a later day and make fried rice, which to some, might be even better then fresh rice. So there you go.

Fried rice. Not really a complicated dish. Basically it is just reheating rice up in a skillet with some stuff. This version is carrot ginger with chickpeas because those flavors are on point and also I had just made a huge batch of chikepeas and always have carrots and ginger on hand. The rice was just waiting to be reheated and I was glad for it because fried rice take a quarter of the time to make then fresh rice (I use brown rice) and I was trying to get dinner done without having to make much of an effort. And because there is veggies and chickpeas in this rice, it is a complete meal and did not need to make anything else. One pot dinner and done. Good things.

Now to the fried rice!

The stuff. Cooked rice, chick peas, carrots, fresh ginger, garlic, soy, red wine vinegar, olive oil, scallions, cabbage, and cilantro (optional). Also going to need a little water. And black pepper.

Start with veggies. Dice the carrots into very small little pieces. Toss into lightly oiled skillet with a splash of water and set on low heat. Then start mincing garlic and the fresh ginger. Toss that into skillet with carrots. Grab scallions and cut the thick white parts from he green and slice thinly and toss into skillet. And lastly shredded cabbage and thinly slice the greens of the scallions and set that aside.

Carrot, ginger, garlic, and scallions are in skillet getting a little heat. Turn heat up to medium, add a splash or two of water, and cook until the carrots are just starting to get a little soft and the ginger and garlic are fragrant. If the

Add in the chick peas, the soy, and the vinegar and cook away.

Once chick peas are warm through, add in the rice and another splash of water and mix around.

And when the rice is warm, add in he cabbage and greens of the scallion and mix until incorporated.

Done and ready.

Now scoop into bowls, toss some cilantro and black pepper on for good measure then grab a eating utensil.

And eat.

Chickpea Carrot Ginger Fried Rice

serves 2-3 as a meals or 5-6 as a side

  • 3 cups already cooked rice (white or brown, I used brown)

  • 2 cups cooked chick peas

  • 2 carrots

  • 2 inches fresh ginger root

  • 2 gloves garlic

  • 3-4 teaspoon soy or liquid aminos

  • 1 tablespoon red or white wine vinegar

  • 1-2 teaspoons olive oil

  • 2-3 large scallions

  • small hunk of cabbage

  • black pepper

  • Few tablespoons water

  • fresh cilantro (optional)

Start by prepping the veggies. Cut the carrots into very small little pieces and toss into a large, lightly oiled skillet Place on stove on low heat with a splash of water. Now mince the garlic and ginger and toss it into the skillet was well. Shredded the hunk of cabbage and set aside Grab the scallion, cut the green parts from the white, then thinly slice the the white, thicker part and toss into the skillet and thinly slice the green and add to the pile with the shredded cabbage. Mix all the veggies around, add another tablespoon or two of water, turn heat up to medium, and cook until carrots are slightly soft and the garlic and ginger are fragrant.

Once it is all starting to cook, toss in the drained chickpeas and add in the vinegar and 2-3 teaspoons of soy. Mix and cook until chickpeas are warm all the way through.

Now for the rice. Toss that in and mix around. Once rice is warm, toss in the greens of the scallions and the shredded cabbage. Cook until the rice is hot. Taste, and if you need more soy, add in in another teaspoon.

Once its all hot, it ready to eat and that is what you do. So scoop into bowls, add some chopped cilantro and black pepper and eat.
