Peach Shortcake

My fruit bowl went from the odd apple and lots of oranges to an overflow of peaches cause its summertime fruit time!

I might have gone a little overboard with the first purchase of peaches and bought like 12 lbs. (Yeah I did). But I knew I wanted to make these shortcakes for the mr and Barb so I figured there is a couple pounds right there that are not going into my mouth so It was like I bought 10 lbs and I can eat 10 lbs of peaches in a week no problem. Facts!

It was weird, I don’t usually plan to far in advances on what I am going to bake but for some reason I had it in my head that I needed to make shortcakes with peaches. Everyone is always making strawberry shortcakes but then stops it there and I don’t know, it just seems like the world needs to expand their fruit and shortcake minds and mix it up. Yes strawberries are fantastic but so is all the other fruit out there. Especially peaches. Peaches are a good fruit to start mixing it up with.

See, I got you. Now to the peach shortcake!

The stuff. Flour baking powder, salt, sugar, coconut oil, plant milk, a can of coconut milk, powder sugar, and ripe peaches.

Start by cutting up peaches. Remove pits and dice small. You can peel them but why?

Place diced peaches into a bowl and toss with a little sugar. Set aside.

Make the biscuits. Toss all the dry together then cut in the very cold coconut oil. You want to have grainy, small little chunks of oil. Next add in the very cold milk and gently fold in with a fork until is is absorbed be gentle to not over mix..

Dump the shaggy dough onto a lighhy scoured counter and gather together.

roll dough out into a shape that is about 1 1/2 inches thick (I went with rectangle) and cut into 6-8 equal sized pieces.

Place cut biscuits on a lined baking sheet, brush tops with a little milk, and sprinkle the tops with a bit of sugar.

Pop into the oven to bake. 20-25 minute unlit golden brown.

And last buy not least, the coconut whipped cream. Take the can of coconut milk from fridge and scoop our the thick cream part. Place into a cold bowl and beat until thick and creamy. Beat in a teaspoon or so of powered sugar if you want a little sweetness.

And then you add it all together. Cut a biscuit in half. scoop on some juicy sweet peaches, then top with a plop of coconut cream.

Summertime in the mouth.


Peach Shortcake

make 6-8 shortcakes

  • 2 cups flour

  • 1/2 cup very cold coconut oil

  • 1 teaspoon salt

  • 1 tablespoon baking powder

  • 1 tablespoon sugar

  • 1 cup very cold plant based milk

  • 5-6 fresh ripe peaches

  • 1-2 tablespoon sugar for peaches (greater amount for sweeter peaches)

  • 1 can full fat coconut milk chilled for 24 hours

  • 1 teaspoon powdered sugar whipped coconut cream (optional)

Start buy cutting up peaches. Remove pits,(peel them if you must) ,and dice into small pieces. Place into a bowl and toss with a tablespoon or so of sugar. Set aside.

Preheat oven to 400

Now for the biscuits. Place flour, baking powder, 1 tablespoon sugar, and salt into a bowl. Mix until incorporated. Add in the very cold coconut oil and cut in with a fork or pastry cutter until the mixture is crumbly but the oil is NOT completely in mixed in. You want the little chunks of oil. Next dump in the very cold milk. Gently mix with a fork unil all the liquid is absorbed and a shaggy dough has formed. Dump dough onto a lightly floured surface and gather together. Pat flat with hands into a rectangle that is about 1 1/2 inches thick ten cut into 6-8 equal sized pieces. Place onto a line baking sheet, brush tops with a little milk and sprinkle with a bit of sugar. Pop into hot oven and bake for 20-25 minutes or until a nice golden brown on top and bottom. Remove form oven and let cool on a wire rack.

For coconut cream. Remove canned coconut milk from fridge, open it and scoop to the top layer of thick coconut cream. Place into a cold bowl and whip with a beater or by hand until thick. If you want to add a little sugar, beat in a teaspoon or so of powdered sugar.

To assemble. Grab a biscuit, cut in half and place on plate or in bowl. Scoop on some peaches and then add a plop of whipped coconut cream. Grab a eating utensil (spoon or fork, you do you) and eat.

Sweet Potato Hand Pies

What, you did’t skip an afternoon of life to stay home avoiding all the things that need to be done to watch the snow gently fall with the twinkle lights on, Sufjan Stevens Christmas playing and make little hand pies? Well shit, maybe that is exactly what you should do because I got to tell you, it was probably one of the best afternoons I have had in a while.

And don’t get at me about the Christmas music. Sufjan Stevens Christmas is one of the things I look forward to the most about this time of year. If you know, you know. If you don’t know, then stop what you are doing and go listen to it. Trust.

These little hand held pies are perfect for the upcoming holiday season, but anytime really. Crispy flaky pie crust filled with spiced sweet potato the is creamy and custard like then topped with a nice chocolate drizzle. All packed nicely into a square that you can eat without plate or fork plus they pack up so nicely (they make great gifts) and are just really freaking amazing. I made a batch and basically the mr and Barb fought over who was going to eat them all because they were just that good. And the mr isn’t even a sweet potato fan. (When will he realize he likes all food?)

Anyway, Take a couple hours and listen to Sufjan Stevens, watch it snow (if you can get it to do that), and make these hand pie, It will make you happy.

Now to the hand pies!

The stuff. For the dough you need flour, salt, brown sugar, ice water, and a stick of frozen vegan butter. (I use country crock vegan butter and it is AMAZING for pie crust). For filling it is baked sweet potatoes, cinnamon, ground ginger and nutmeg, and maple syrup. Also need chocolate chips and a little coconut oil for a nice chocolate drizzle.

Make dough. Whisk together the dry and grate the butter into it. Toss around with a fork and drizzle in ice water, a tablespoon at a time, until dough looks a little shaggy but can kind of smoosh together into a dough. Dump the dough out onto a piece of plastic wrap and gather together into a tight disk. Wrap completely and place into fridge to rest for about an hour. Also can be made a day or two in advance.

Filling. Just scoop baked sweet potatoes into a bowl, add in the spices and maple, and blend (use a hand blender or normal blender) until mixed and smooth. You could actually just mix it with a fork too if you want, just won’t be as smooth.

Once dough has chilled, place on a lightly flour surface and roll into a large rectangle roughly 12x14 inches.

Cut down the center then each side into 4 rectangle pieces.

Scoop filling onto each piece, fold in half and crimp the edges closed with a fork. Poke the tops so they don’t explode, and place on a baking sheet. Once they are all filled and on the beige sheet, pop them into the fridge for about 15 minutes and preheat oven to 350.

Once oven is hot, into the oven they go. Bake for about and hour, give or take a minute or 5.

Now would you look at that. Golden brown and damn near perfection. Get them off baking sheet and onto a metal rack to cool.

While they are cooling, make up a little chocolate drizzle situation. Chocolate chips and coconut oil. Just pop into microwave (or do it on a stove) for 30 second increments until mostly melted. Stir around until smooth and drizzle able.

Then drizzle, all over. Make it nice!

That is it. You now have hand pies and you now eat one.

Sweet Potato Hand Pies

makes 8 hand pies

  • 1 1/2 cups all purpose flour

  • 1/2 teaspoon salt

  • 1/3-1/2 cup ice water

  • 1 stick or 8 tablespoons vegan butter, FROZEN (country crock vegan butter works amazing, but so does earth balance)

  • 1 tablespoon brown sugar

  • 1 1/2 cups sweet potato puree (Around 2 large baked sweet potatoes)

  • 1 tablespoon maple syrup

  • 1 1/2 teaspoon cinnamon

  • 1/2 teaspoon ginger

  • pinch of nutmeg

  • 1/3 cup chocolate chip

  • 1 teaspoon coconut oil

Start by making dough. Whisk together the flour, brown sugar, and salt. Take the frown stick of butter and grate it into bowl. (Frozen grates so much better). Mix gently with a fork while drizzling in ice water until the dough starts to look shaggy. Grab a clump and smoosh it together. If it completely crumbles, add a little more water until it can smoosh into a dough. Dump it out onto a piece of plastic warp and pulling up the sides, gather it into a tight disk. IF it is still really crumbly, toss in another tablespoon of water. Wrap the dogs tightly and smoosh it into a rectangle and then place in fridge for about an hour. Can also be made a few days in advance.

For filling. Blend together sweet potato puree, the spices, and the maple syrup until smooth.

To assemble. Roll out chilled pie dough into a rectangle around 12x14 inches. Cut the half the long way down then cut each side into 4 equal sized rectangles. Take the filling and place about 2 tablespoons onto the end, leaving a little lip, of each rectangle. Fold in half and with a fork, feel the edges. Poke the tops with fork. Place the assembled pies on a baking sheet and pop the sheet into the fridge for 15ish minutes.

Preheat oven to 350.

After the fridge and when the oven is hot, pop the pie into the oven. Bake for about 60 minutes or until the crusts are golden brown and bottoms are a nice dark(not burnt) brown.

Remove from oven and place pies on wire rack to cool.

For chocolate drizzle just place the chocolate chips into a microwave safe bowl with the coconut oil. Heat for about a minutes or so until the chips start to melt and then mix together until it is smooth and drizzlable. Now drizzle the chocolate all over cooling pies.

And that is it. You can let the pies cool completely and the chocolate will set so it won’t smear, but you can also jus start eating them.

Pies are good for 4-5 days left on counter but really, they will not last that long.

  • 350 for 60 minutes

Sweet Pea Snack Cake with Strawberry Glaze

It started a few nights ago when I was eating my after dinner dessert snack. A big bowl of fresh strawberries. But there was something missing. I wanted a little something else to add to my dessert so I opened the freezer to see if there was any frozen bananas. What caught my eye was the bag of peas. And it just seemed right so I poured some into a bowl, dumped hot water on them to thaw, and mixed them into the bowl with the strawberries. Now I got to tell you, it was one of the most satisfying delicious desserts I have had in a long time. Think about it. Peas are sweet and creamy and strawberries are sweet and tart. The combination might seem a little strange but haven’t we learned by now that I am always right about flavors? HAHA. But really. It’s one of my new favorite snacks.

Now how to share my newfound love of peas and strawberries? Well cake of course. I figured people are less hesitant to try new flavor combinations when in cake form because everyone wants cake. And I was right. Plus it is a real looker if I do say so myself. Bright green cake with bright red strawberry glaze. A spring time snack with the spring time feels. Everything about this cake is right on point with all the things. And it is super fast and easy to make to boot because it’s all thrown together in a blender.

You really can’t go wrong here friends. And if you happened to be needing a little something something to snack on with your mama this weekend, well I think you just found the perfect snack.

Now to the cake!

The stuff. Peas,strawberrie jam of perceives (I had just made it so it is still warm) Flour, sugar and powdered sugar, baking soda and powder, salt, oil, and vinegar.

Super easy here. Place peas into blender and blend until smooth. Add oil and sugar and blend until incorporated. Then add in all the dry. Before you blend, take a spoon or spatula and hand mix it a little. Add in a cup of water and vinegar then pulse until incorporated. Don’t over blend it or else it will be tough.

Pour batter into a well greased pan and pop into a hot oven. Bake.

Afer about 25 minuts, check for doneness. When the fork or tester comes out clean, it is done!

Pop cake out and let cool on a wire rack.

And glaze. Warm up the jam in the microwave on on stove until loose then mix jam with powdered sugar.

When the cake has cooled, grab a fork and stab holes all over so when you pour glaze on it will kind of seep into said holes.

Pop cake back into pan (or don’t if you dont want too) and pour glaze all over top.

A dusting of powdered sugar for looks and done and done. Cut into squares, pop a piece on a plate, and snack away.

Sweet Pea Snack Cake with Strawberry Glaze

makes a 9x9 cake

  • 2 cups all purpose flour

  • 3/4 cup white sugar

  • 1 1/3 cups sweet peas (fresh or frozen and thawed)

  • 1 cup water

  • 1/3 cup oil

  • 1/2 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 tablespoon vinegar

  • 1 cup powdered sugar

  • 3 tablespoon strawberries jam or preserves

Preheat oven to 350

Place peas into blender ans blend until smooth. Add in oil and sugar and blend until incorporated. Next add in baking soda and powder and then flour on top. Grab a spoon or spatula and mix a little to give the batter a head start then add int he water and vinegar. Pulse in blender for a few seconds, scrap sides, then pulse again until it just become a cohesive batter. Don’t oven blend it or that cake will be tough.

Pour batter into a well greased 9x9 baking tin and place into hot oven. Bake for about 25 minutes or until golden brown and a tester comes out clean. When it is done, pop out of oven and pop cake out of tin to cool on a wire rack.

Once cake is cooled, place back into baking pan. Mix together the powdered sugar and jam then either microwave it or heat on stove for 30ish seconds until warmed and pourable. Grab a fork and stab holes all over top of cake then pour glaze all over.

Sprinkle some more powdered sugar on top for looks, but other then that, it’s now time to eat.

Cake that is not eaten is best keep at room temperature for 2-3 days. Can be frozen too.

Chocolate Pudding Parfaits

Pudding is comfort. Pudding is simple. Pudding is just that, nothing but pudding. And if you add some graham cracker crumble, well you got yourself a pudding parfait. And a pudding party of sorts, if you need one.

Now do you, like me, think about grade school when you see pudding? Or how about Billy Madison. Oh hell yeah, definitely watching Billy Madison, in grade school, with a snack pack. HA. Those were some days right there. And with all the littles being homeschooled these crazy days, I figured why not bring in a bit of the grade school feeling into the routine and make some pudding for an after lunch or after “school” snack. For the routine purposes and also as a form of a bribe. Yes. You can bribe your children with pudding. Or your partner. The mr got his pudding too, just after he dealt with the recycling on the porch.

And plus. Oat milk. You got a stash? Yeah? Well use it in this pudding. It will make you glad you panicked bought 10 cartons and hid them under your mattress. Right next to all the canned beans of course.

Now to the pudding!

The stuff. Oat milk (use any milk you want or have), cocoa powder, brown sugar, corn starch, brewed coffee (optional), vanilla extract, graham crackers, coconut oil, and a little salt.

Start with a pot. Mix in the cocoa powder, brown sugar, and corn starch, and pinch of salt. Add in a little milk and coffee if using and mix around until its a thick paste and everything is incorporated.

Now add in the rest of the milk and place on medium heat on the stove. Heat up for about 3ish minutes and once it starts get hot and you see a bubble or two, start whiskingand don’t stop. Whisk all around pot, all over the bottom, so no spot start to burn. Whisk whisk whisk, until it thickens to pudding consistency. Should take 3-5 minutes.

Once thick and pudding like turn heat off and add in the vanilla and chocolate chips. Whisk until completely melted and incorporated.

Silky and smooth. Hot pudding.

Pour the pudding into a jar or bowl and place into the fridge to set. 1- 2 hours.

In the meantime, graham cracker crumble. Smash up the crackers into a bowl, (big chunks are good) and add in the melted coconut oil and a tablespoon of brown sugar.

Mix around until evenly incorporated

Dump the crumbs onto a baking sheet and stick into the oven to toast up for about 10 minutes.

And now you assemble. Graham crumble on a vessel, topped with pudding, more crumble, and whatever whipped cream, yogurt, ice cream situation you might want to top it with.

Pudding. All for you to eat.

Chocolate Pudding Pie Parfaits

make 4-6 serving

  • 2 cups oat milk (can use any milk you have on hand)

  • 1/3 packed cup brown sugar

  • 2 tablespoon brewed coffee (optional but makes it a little more deep and chocolatey)

  • 3 tablespoon cocoa powder

  • 1/3 cup chocolate chips

  • 2 tablespoons cornstarch

  • pinch of salt

  • 1 teaspoon vanilla extract

    For Graham Cracker Crumble

  • 6 full sheets of package of graham crackers

  • 2 tablespoon melted coconut oil or vegan butter

  • 1 tablespoon brown sugar

In a medium size pot mix together the cocoa powder, brown sugar, corn starch, and a pinch of salt. Add in the coffee if using, and about 1/2 cup of milk. Mix until all the ingredients are evenly incorporated and the mixture is kind of pasty. Place pot on stove on medium heat and add in the rest of the milk . Let mixture heat up for a few minutes and once it starts to warm, start whisking. Whisk consistency until the mixture heats up and thickens to a pretty thick pudding consistency. Remove from heat, add in the chocolate chips and vanilla and keep whisking until the chocolate completely melts it.

Pour pudding into a jar or bowl and place into the fridge. 1-2 hours to cool and set.

In the meantime make the graham cracker crumble. Preheat oven to 350. Crush up crackers into a bowl (some big chunks are good) and mix in the brown sugar and melted coconut oil. Mix around until the crumbs are evenly moisten. Dump the crumble onto a baking sheet and place into oven for about 10 minutes or until the crumble is a nice deep golden brown. Remove from oven and let cool.

Once the pudding is set and the crumble is toasted, it is time to assemble. Scoop some crumble into a bowl or jar, add in some pudding, then top with more crumble. If you want, top with a dollop of something creamy like whipped cream, yogurt, or even ice cream.

Eat.

IF there is pudding and crumble left over, store the pudding I the fridge (will last a few days) and the crumble separately at room temperature in a airtight container.

Lemon Cardamom Gingerbread Crinkle Cookies

I love December, basically because it is a month long excuse to always be baking cookies. And listen to Christmas music. And have a lovely big ass tree in the house covered in lights and dried fruit. Plus snow if we are really lucky. December. It’s a good month.

And we are getting to that time when now most of us have serious cookie making on the brain. I bet if you ask 5 people what they are planning on doing in the next few days leading up to Christmas, at least 3 of them will tell you they are making cookies because really, that is what you should be doing. That is if you like to bake. If not, then by all means, skip cookie baking.

Now what cookies to bake? Well you got to have chocolate chip, and peanut butter. Plus some no bakes and sugar cookies, but also, I think, some type of gingerbread.

These cookies are the gingerbread something. I added cardamon because I think cardamom is delicious and think everyone will think so too, And lemon because lemon goes with cardamom and ginger and lemon cardamon ginger just has a nice ring to it. Then crinkle because I didn’t really want to roll out dough and cut out shapes (I was being lazy), but I wanted pretty and I am really Into the crinkle look.

These cookies were a huge hit. Not crispy like a snap, but not cakey or overly soft. A nice chew and deep in flavor. The mr was basically smuggling these cookies all day before I had a chance to really hide them and he is not a typical gingerbread lover but he told me that these cookies might just be the best cookies he has ever had. So yeah, I guess this is now my new winner gingerbread cookie recipe.

And no joke, these are probably the best smelling cookies I have ever made. I wanted to bottle up the smell and wear it on me like a teenage boy wears a new bottle of axe. Seriously, I kept sniffing my sweater all day long just to get a good hit of the smell. So good!

Now to the cookies!

The stuff. In one bowl there is flour, salt, and baking soda and powder. The other bowl is brown sugar and molasses. There there is a couple flax eggs, some oil, a lemon for it’s zest, and spices of ginger, cardamon, cinnamon, and black pepper. Also powdered sugar to roll and crinkle these cookies.

Wet stuff. Sugar, molasses, flax eggs, and oil. Mix until combined.

Dry stuff. Flour, baking soda and powder, salt, and the spices. Add in the lemon zest too and whisk to combine.

Wet into dry. Grab a wooden spoon and mix until a cohesive dough forms. And yes you can give up the spoon after a minute and use your hands to complete the mixing… I did.

After dough is mixed and uniform, pop the bowl into the fridge for a little while to give he dough some time to rest. Half an hour is good and you could even leave it for a day if you wanted to, just cover it if you do.

And when the dough has had it’s time, scoop, roll into balls, ans roll around and completely coat in powdered sugar.

Sugars balls of dough. Now pop them into the oven.

TA DA! Baked and all crinkly.

Let the cookies cool on a wire rack because that’s how all cookie cool. And smell that delicious oh so lovely smell. It really is amazing, no?

Then onto a serving plate and now you have cookies for your mouth face.

Lemon Cardamom Gingerbread Crinkle Cookies

makes around 2 dozen cookies

  • 2 1/2 cups all purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 tablespoon ground ginger

  • 3/4 teaspoon ground cardamom

  • 2 teaspoon cinnamon

  • 1 teaspoon pepper

  • zest of a lemon (about 2 teaspoons)

  • 3/4 cup brown sugar

  • 1/4 cup molasses

  • 2/3 cup neutral oil (I used canola)

  • 2 flax eggs (6 tablespoon warm water mixed with 2 tablespoon ground flax seed)

  • 1/2 -3/4 cup powdered sugar

To start, grab a bowl and mix together the brown sugar, molasses, oil, and flax seed eggs until completely combines. In another large bowl, whisk together the flour, all the spices (ginger, cardamon, cinnamon,and pepper), the zest of the lemon, baking powder and soda, and salt. Pour the wet mixture into the bowl with the dry and mix together until a cohesive dough forms. Place dough in fridge for about a 1/2 hour to up to a day to let dough rest for a bit. If you are going to keep in the fridge for a while, just cover it up.

When ready to bake, preheat oven to 350 and measure out powdered sugar into a bowl

Remove dough from fridge and using a scoop or just eyeballing it, scoop about 2 tablespoons worth of dough. With each scoop, roll the dough into a ball and place into the bowl of the powdered sugar and roll around unit completely coated. Place ball on a baking sheet, giving it a little pat down, NOT squishing it down, just a little indent. And don’t overcrowd balls, give them a little space.
